Stir-fried Noodles

Bonjour,

Few days ago, I felt I do not want to have rice for lunch or dinner, so I thought why not I make some noodles instead! I'll put two recipe of noodles here, fried yellow noodles and fried vermicelli noodles. Fried vermicelli or rice noodles also called fried bee hoon in Asia.

Actually, a plain fried noodles either yellow noodles or fried vermicelli is very easy to prepare. We could always add other ingredients like seafood, meat and any kind of vegetables to make it a one dish of delicious fried noodles.

Now, let's see the easy and simple fried noodles recipe below.

FRIED YELLOW NOODLES


Ingredients:-

1/2 pack medium chinese noodles
1 carrot, sliced
1 small bowl chinese cabbage, cut
1 small bowl bean sprouts
1 small bowl young corn, cut
1 small bowl pak choy, cut ( green vegetable)
2 cloves garlic, chopped
2 tablespoon light soy sauce
1 tablespoon oyster sauce
1 tablespoon chilli sauce or ketchup
Salt and peppet to taste
Oil for frying

METHOD:-

- Cook the noodles according to pack instruction.
- Heat the little oil in a wok and fry garlic until fragrant.
- Add in carrot, chinese cabbage, young corn and pak choy and stir fry for 2-3 minutes.
- Add the noodles and bean sprouts then continue to stir fry for a minute.
- Season with light soy sauce, oyster sauce, chilli sauce and salt and pepper, then cook for another minute.


FRIED VERMICELLI


Ingredient:-

1 pack rice vermicelli noodles (soak in water for 30 minutes, then drained)
1 small bowl bean sprouts
1 egg
2 cloves garlic, chopped
2 tablespoon light soy sauce
1 tablespoon dark soy sauce
1 tablesppon chilli sauce
1 teaspoon chilli powder or paprika
1/2 cup water
Salt and pepper to taste
Oil for frying

METHOD:-

- In a small bowl, mix together light and dark soy sauce, chilli sauce and chilli powder.
- Heat the oil in a wok and fry garlic until fragrant.
- Crack the egg in the wok and scramble lightly until the egg are cooked.
- Add in the soy sauce mixture and bean sprouts and stir for a minutes.
- Add in the rice vermicelli noodles and add a bit of water.
- Stir around and mix well to coat noodles with seasoning and taste with salt and pepper.
- Add more soy sauce and water if desired.
- Garnish with fried onion and chopped spring onion.

Banana Raisin Muffins

Salut,

I haven't baked cupcake or muffins for quite a while but today I have just made these banana raisin muffins and they turned out very light, fluffy, moist and delicious. These muffins are so easy to make, just to throw together and it's perfect for last minute dessert or breakfast. This easy banana muffin recipe can even make with fresh or frozen blueberries or dried fruits which can also help satisfy a sweet tooth.



BANANA RAISIN MUFFINS

Ingredients:-

1 1/2 cups all purpose flour
2 teaspoon baking powder
1/4 teaspoon salt
1 egg
1/2 cup sugar
1/2 cup fresh milk
1/4 cup vegetables oil
1 teaspoon vanilla extract
1 mashed banana
1/2 cup raisins
A little sliced banana for topping

METHOD:-

- Preheat oven 180°.
- Sift together flour, baking powder and salt. Set aside.
- In a medium bowl, whisk together egg and sugar until combined.
- Whisk in milk, oil, mashed banana and vanilla extract.
- Add in flour and mix everything using wooden spoon or spatula. Do not over mixing. Fold in raisins.
- Spoon batter into prapared muffin tins and finish with slices of banana and bake at 180° for 5 minutes.
- Reduce oven temperature to 170° and continue to bake for 20-25 minutes or until toothpick come out clean.

Mango Cake

Bonjour,

This was my first time making this type of cake with fresh mango as one of the ingredients. When I cut and take a bite of the mango cake it taste like a crumbled cake. It's a crunchy soft crumb on top but it did taste pretty good.

Here's a simple recipe for making these little mango cake and just use a small cake pans to bake the cake.



MANGO CAKE

Ingredients:-

1/2 cup all purpose flour
1 teaspoon baking powder
1/2 teaspoon cinnamon powder
1/2 teaspoon salt
1/2 cup sugar
1/2 cup vegetable oil
1 egg
1 cup fresh mango, chopped

METHOD:-

- Preheat oven 180°.
- Combined the flour, baking powder, cinnamon and salt.
- In a bowl, beat the sugar, oil and egg until well blended.
- Add flour into sugar mixture and mix well.
- Fold in mango using wooden spoon because the cake batter will be little thicker.
- Transfer the batter to a greased pan.
- Bake for 25-30 minute or until a toothpick inserted comes out clean.

Turmeric Fried Prawn

Bonjour a tous...

Prawns are always delicious no matter how you cook it. I remember how my mom's used to make some dishes using fresh turmeric and the taste are better than powder one. I liked the taste of tumeric and this time, I used turmeric powder in my recipe for savory dishes. We really enjoyed our food and it's easy to make and tastes amazing.

Alors, let me share the recipe of turmeric fried prawn.



TURMERIC FRIED PRAWN

Ingredients:-

300gm medium prawn
1 tablespoon turmeric powder
1 onion, sliced
1 stalks of green long bean, cut
2 cloves garlic, minced
1 big red chilli, cut
Salt and pepper to taste
Oil for fyring

METHOD:-

- Marinated prawns with turmeric powder for at least 20 minutes.
- Heat oil in frying pan and fry frawns for a few minutes or until golden brown. Keep aside.
- Sauteed garlic with little oil until fragrant.
- Add onion and long bean, stir until all well mixed for about 2 minutes.
- Add in fried prawns and red chilli and mix well.
- Season with salt and pepper.
- Serve with hot rice...

Rainbow Marble Cake

Bonsoir,

Yesterday I made a simple Rainbow Cake for our friend opening ceremony for an art exhibition tomorrow. This recipe is a basic marble cake, but the variety of colours make it more pretty and cheerful rainbow cake.
I've made once rainbow cake few months back with different ingredients, but this one more simple and the tasted was pretty good too.

Let's have a look to the recipe below.



RAINBOW MARBLE CAKE

Ingredients:-

2 cups all purpose flour
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
1 cup vegetables oil
1 cup sugar
1 cup fresh milk
1 egg
1 teaspoon vanila extract
1 teaspoon coco powder
Food colouring

METHOD:-

- Preheat oven 180°. Grease the cake tins and keep aside.
- Sift flour together with baking powder and bicarbonate of soda.
- In a big bowl, beat the egg until frothy. Add sugar and continue beating.
- Add in oil, milk and vanila extract and mix well.
- Add the flour mixture until just combined. But do not over mix.
- Divide the cake batter into six bowls. Add the food colouring at each bowl and coco powder in one of the bowl.
- Layer of each colour batter into the pan until finish.
- Bake for 45-50 minutes or until skewer comes out clean.

Stir-Fried Chinese Cabbage

Coucou...

A friend of mine asking what kind of vegetables I cooked few days ago when we celebrate our friends birthday. The answer is Chinese cabbage. She liked it and it's such a simple and delicious. Chinese cabbage is a very popular Chinese dish in Asia. It so easy to prepare and also taste good.

So, let me share this simple and healthy recipe.


STIR FRIED CHINESE CABBAGE

Ingredients:-

1 whole or half Chinese cabbage, shredded
2 cloves garlic, minced
1 tablespoon light soy sauce
1 tablespoon oyster sauce
1 tablespoon vegetable oil
Salt and pepper to taste

METHOD:-

- Heat the oil in wok or frying pan and stir in garlic until fragrant.
- Add in cabbage and stir fry the cabbage for about a minute.
- Pour in soy sauce and oyster sauce.
- Season with salt and pepper and stir fry for another minute. But do not overcook cabbage because they will become soft and slimy. It taste better when the cabbage slightly crunchy.
- Remove from heat and serve hot.
- Sprinkle with fried onions over it for a delicious dish.

Cereal Cake

Salut,

I made Cereal Cake this afternoon. Since I still have a cereal stock at home, so I decided to try on Cereal Cake. While baking, the aroma of cereal is so irresistible. In fact, this cake taste good too. I devided half of the cake to makes a birthday cake for my friend. Happy happy birthday my friend! (Slightly belated)

For the cake decorating, I have to say that I'm not really good at decorating them. I love baking, but cake decorating takes some talent. I have so much to learn and need to do a lot of practice in the future.

Alors, let see the Cereal Cake recipe below..



CEREAL CAKE

Ingredients:-

125gm butter
125gm sugar
150gm flour
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
3 eggs
1 cup fresh milk
1 teaspoon vanila essence
3 tablespoon cereal
3 tablespoon chocolate powder (poulain)

METHOD:-

- Preheat oven 180°. Grease the cake pan.
- Shift flour with baking powder and bicarbonate of soda.
- Beat butter and sugar until light and fluffy.
- Add egg one at a time and continue to beat.
- Fold in the shift flour and pour in milk and stir to well.
- Devide the batter into two bowl.
- Add chocolate powder into the other batter, while in another bowl add cereal. Mix them well.
- Layer the two flavors of batter into the pans, dividing evenly among the pans.
- Bake for about 40-45 minutes or until the skewer comes out clean.

Creamy Cheesy Butter Prawn

Bonjour,

Prawn, I love prawn very much and I'm sure we all love prawn. This creamy cheesy butter prawn is so delicious and so easy to make. We will never had enough everytime I cooked prawn. We loved it and even licked our plate clean. This is our family most favorite food.

Here the simply recipe of creamy cheesy butter prawn.


CREAMY CHEESY BUTTER PRAWN

Ingredients:-

500gm prawn
2 tablespoon cornflour
3 tablespoon butter
3 cloves garlic, minced
1 1/2 cup fresh milk or full cream milk
4 sliced cheddar cheese
Salt and pepper to taste

METHOD:-

- Season prawn with salt and coat with cornflour.
- Fry the prawn until golden brown. Set aside.
- Heat up the butter until melted and sautee garlic till fragrant.
- Add in fresh milk and let it boil for few minute or until sauce slightly thicken.
- Season with salt and pepper.
- Add in the prawns and cheddar cheese and once the cheese melted, dish up and served hot.

Deep-fried Spring Roll

Salut...

Deep fried Spring Roll or Popiah goreng in Malay are so good and delicious. They are so crunchy and one or two spring roll is definitely not enough. Since I introduced these spring roll to mon mari, he loved them very much. Before, he only knows non fried spring roll and they are typically bigger and more savory.

Home made spring roll are always better than frozen one from supermarket. Even though it takes a little time to roll them, I still prefer making it myself. I've made a simple spring roll recipe and everyone loved it. Here is my style spring roll recipe.



SPRING ROLL (POPIAH GORENG)

Ingredients:-

1 packet spring roll skins (I used small size spring roll)
1 onion, sliced
2 carrot, grated
1 small bowl beansprouts
2 tablespoon light soya sauce
Salt and pepper to taste

METHOD:-

- Heat a little oil in pan and sautee onion till fragrant.
- Add in carrot and mix well.
- Put in the beansprouts.
- Season with soy sauce, salt and pepper. Toss it around and turn off the flame.
- Put a piece of spring roll skin on a chopping board.
- Place a teaspoon of filling closed to the edge of the skin.
- Roll the skin inwards with the filling intact.
- Halfway through, flap both left and right side inwards and complete rolling the spring roll.
- Seal with flour + water mix, as a glue.
- Deep fry in hot oil on low fire till golden brown.
- Enjoy the spring roll, and dipped on chilli sauce.

Es Buah (Iced Fruits)

Bonsoir,

I've tried this Es Buah when I was in Indonesia few years ago. It's an easy way to stay cool and used up any fruit at home specially during summer season. In Indonesia, Es Buah is made from fresh tropical fruits and it taste so good, simple and refreshing. Here in Europe, getting good tropical asian fruits right now is almost impossible. So, I made this simple recipe with fruits like apples, pears, strawberry, kiwi and pineapple.



ES BUAH (ICED FRUITS)

Ingredients:-

1 apple
1 pear
3 strawberrys
1 kiwi
1/2 can pineapple cube
Condensed milk to taste
Sugar syrup to taste
Ice cubes, crushed

METHOD:-

- Cut all the fruits into bite size.
- Put the fruits in a serving glass or bowl, and top up with crushed ice.
- Pour sugar syrup and drizzle with condensed milk.

Rojak (Exotic Malaysian Salad)

Salut a tous...

Rojak is in Malay, it means 'mixed up'. By mixing up everything in one plate that's we called Rojak. The following recipe is based on the Malay preparation. The sauce quite spicy but it's depend on the individual taste, you just put less chilli or avoid it. It's a unique taste, but give it a try, try it to believe it.

Being apart from family just make me miss asian food. My sister and mostly I miss my mom's cooking. No matter how adventure it is, I will always have things that I miss from home. I love spicy food and anything with chillies, I would not refused.

So, here is the recipe of homemade Rojak. I got some of the stuffs from Asian grocery store and there is some of asian things I can find there.



ROJAK

Ingredients:-

2 tablespoon dark soy sauce
2 tablespoon chilli sauce
1 tablespoon chilli paste or chilli powder
1 tablespoon thick tamarind paste
4 tablespoon dark brown sugar or gula melaka
1 teaspoon dried shrimp paste or belachan
1/2 cup water
1/2 cup crushed peanuts
1 teaspoon sesame seed

METHOD:-

- To make the sauce, thoroughly mix all ingredients except peanuts and sesame seeds.
- Bring to boil and stir to mix constantly until the sauce thickens slightly.
- Remove from the heat, allow to cool completely.

For the fruit:-
- Cucumber, pineapple, guava, beansprout and fried tofu.
- Any fruits such an apple or pear would be good too.
- Cut the fruits into bite size and toss them into salad bowl.
- Stir in sauce and top with crushed peanuts and sesame seeds.

Banana Custard

Bonjour a tous,

I have some of banana leftover in the kitchen and I've thought to do something with them. So, this afternoon I've made banana custard for our tea time snacks. It's simple and tasty, easy recipe and the result was great. For the creamy custard sauce, it can be use for other recipe as well and any kind of fruits we can make for fruit custard and just pour the custard on top of it. It just simple as that.



BANANA CUSTARD

Ingredients:-

4 bananas, sliced
2 cups fresh milk
1/2 cup custard powder
1/2 cup sugar
40gm raisins
1 tablespoon butter
1 teaspoon vanila extract

METHOD:-

- Melt butter in a non-stick frying pan and fry the bananas both side until the bananas turn to golden brown.
- Remove and place the fried banana into the bowl and sprinkle with raisins. Keep aside.
- Mix together milk, custard powder, sugar and vanila and stir well until it dissolves.
- Bring the mixture to boil and stirring constantly until the custard slightly thicken.
- Remove from heat and pour the custard on top of fried banana in the bowl.
- Refrigerate for few hour and served chilled.

Nasi Goreng Kampung (Village style fried rice)

Coucou,

I had fried rice few days ago for dinner. It's called village style fried rice because of proper Malay homestyle cooking, I guess so or maybe by some different ingredients we use to put in this fried rice. Anyway, this dish usually cooked using birds chillies and it supposed to be spicy. But it depend on the individual, you want spicy or not? Another thing which make this dish good is the fried anchovies. So tasty and it's the best..

Alors, let's look to the recipe below..



NASI GORENG KAMPUNG (VILLAGE FRIED RICE)

Ingredients:-

1 Small bowl rice (left over rice)
1/2 cup chopped green longbeans
1/2 cup anchovies
1 egg
2 cloves garlic, chopped
2 cloves shallots, chopped
Small chillies, optional
Light soy sauce, to taste
Salt and pepper to taste
Oil for frying

METHOD:-

- Fried the anchovies until crisp and put aside to drain.
- In frying pan, heat the oil and fry garlic, shallots and chillies until fragrant.
- Add the beans and toss for a minute until little bit soften.
- Crack the egg in and fry them up.
- Add and crumble the rice until everything is incorporate.
- Mix in the crispy anchovies and season with soy sauce and salt and pepper.

Sardines in tomato sauce with onion and garlic

Salut,

I love sardines. I've been eating sardines in the can since I was a child. I always have stock sardines in my pantry so I can cook this dish whenever I craving for it. There are so many brand of canned sardines produces here and these sardines are available in a variety of flavors. For me, I liked sardines in tomato sauce.

Like many people here eat sardines straight from the can without cooking them, because for them cooking would spoil the texture. Some eat it with salad and bread with squeeze of lemon. Unlike me, I really liked eating canned sardines when it is cook and fried up with onion, garlic, chilli padi and extra tomato sauce and again, served with rice. So yummy..

It's happen once when I cooked sardine and make them for sardines sandwich, it surprises some people that never had them that way before. In fact they like it and asking what did I put on my sardine recipe.

So, here come of my simple recipe of sardines in tomato sauce with onion and garlic.



SARDINES IN TOMATO SAUCE WITH ONION AND GARLIC 

Ingredients:-

1 tin of sardines in tomato sauce
1 onion, sliced
4 cloves garlic,sliced
Chilli padi, optional
2 tablespoon tomato ketchup
1 tablespoon light soy sauce
Salt and pepper to taste

METHOD:-

- Fry onion, garlic and chilli with a little oil in frying pan until onions slightly softened.
- Add the sardines, tomato ketchup and soy sauce. Add it about 3 tablespoon of water and simmer for a minute.
- Once the sauce little bit thickened, season with salt and pepper.
- Sardines are ready to serve with rice and sprinkle with some lemon.
- This dish also can make for sardine sandwich or sardine roll.

Eggless Moist Chocolate Cake

Bonsoir,

After a while, I felt I wanna make a chocolate cake again. I actually experimented with few different variation of chocolate cake recipe, and so far this was the best. With the eggless cake recipe that I discover, it is does not use butter but oil and it is also one of the easiest cakes to make. There don't have to be complicated to prepare and I guess being simple and easy is the best. The cake itself holds its own taste even without the topping and it's not too sweet and even more if it come with topping or some ganache.

I love to learn more and I might try other chocolate cake recipe in the future to try out new tastes. The important thing is to be able to find recipes which is simple, easy and delicious.

Ok, here's the recipe...



EGGLESS MOIST CHOCOLATE CAKE

Ingredients:-

2 cups all purpose flour
2 cups sugar
1 cup cocoa powder
1 tablespoon baking powder
1 tablespoon bicarbonate of soda
1 teaspoon salt
2 cups water
1 cup vegetable oil
1/2 cup fresh milk
1 teaspoon vanila extract
2 tablespoon white vinegar

METHOD:-

- Preheat oven 180°.
- In the large bowl, combine all dry ingredients, flour, sugar, cocoa, baking powder, bicarbonate and salt.
- Add water, oil, milk, vanila extract and vinegar into the flour mixture. With a hand whisk, beat all the ingredients until it mixed well.
- Pour the batter into a greased baking tin and bake for 30 minutes.
- Remove from oven and let it cool completely.
- Spread with the chocolate ganache, frosting or any topping as you desire.

Perkedel Kentang (Mashed potato fritters)

Salut a tous,

One of the most popular side dish in Indonesia is perkedel kentang or mashed potato fritter. The ingredient is not complicated at all just need a little time to prepare it. Today I felt like eating this perkedel kentang or mashed potato fritters. I love potatoes, and perkedel is one of my favorite food. So, I made this perkedel in the afternoon for our afternoon tea time food.

Alors, voici la recette.



PERKEDEL KENTANG (MASHED POTATO FRITTERS)

Ingredients:-

4 potato, boiled and mashed
2 cloves shallot, chop
2 cloves garlic, chop
1 stalk spring onion, chop thinly
1 egg, lightly beaten
Salt and pepper to taste
Oil for frying

METHOD:-

- Fry the shallot and garlic until brown and crispy, put aside.
- Mix together mashed potato, fried shallot, spring onion and salt and pepper until all spices distribute evenly.
- Shape the potatoes mix into a small ball, press a little to make thinner shape.
- Dip the potato ball into egg and fry the ball until golden brown.
- Remove and dry on paper towel.

Fruit Salad (Filipino style dessert)

Bonjour,

Few years ago, a friend of mine introduced me to Filipino style fruit salad and this is one of the favorite dessert in most Filipino parties. I've made fruit salad this afternoon and it's perfect for our teatime dessert.
It's so easy to prepare a quick fruit salad for a simple snack, anytime, anywhere.



FRUIT SALAD

Ingredients:-

1 can fruit cocktail (250gm)
1 can pineapple cubes (250gm)
1 packet of creme liquid (20cl)
1/2 can condensed milk
60gm raisins
Cheeder cheese sliced (optional)

METHOD:-

- Drain the fruit cocktail and pineapple cube.
- Place all ingredients in a bowl and mix until fully combined.
- Refrigerate for several hour before serving.

Broken egg curry and stir-fry bean sprouts

Bonsoir a tous..

Dinner tonight was asian food. Healthy food and simple to make. The easiest broken egg curry and stir fry bean sprout with carrot. What I love about stir fry dishes are that they are so easy to make. The recipes are simple and at the same time it make interesting meals.

BROKEN EGG CURRY

Ingredients:-

2 eggs
1 onion, sliced
2 cloves garlic, chop
2 tablespoon curry power, add water to make paste
1 teaspoon paprika or chilli powder
Salt and pepper to taste

METHOD:-

- Heat 1 tablepoon oil in pan. Sautee garlic and onion until fragrant and golden brown.
- Add curry paste and paprika and fry for 1 minutes.
- Add a cup of water and cook for 4-5 minutes till gravy a little bit thickens.
- Then break the egg into the curry.
- When the eggs are fully cooked, stir the curry gently.
- The curry now is ready to serve.




STIR FRY BEAN SPROUT WITH CARROT

Ingredients:-

200gm bean sprouts
1 carrot, sliced into thin strips
3 cloves garlic, chopped
1 tablespoon light soy sauce
1 teaspoon oyster sauce
salt and pepper to taste

METHOD:-

- Heat 1 tablespoon oil in pan. Sautee garlic untill fragrant.
- Add carrot and stir around 2 minutes.
- Add bean sprouts, soy sauce and oyster sauce.
- Season with salt and pepper. Stir fry 1-2 minutes or until bean sprouts are crispy tender.
- Served immediately.
