Tabbouleh

Bonjour,

As far as I know, tabbouleh is one of the most popular salad in Middle East. Tabbouleh is also popular in Europe, one of the healthy, delicious and refreshing salad especially during spring and summer. Tabbouleh is made with lots of raw vegetables, it's a fresh salad that we can eat them all day, delightful salad it is!


This french way of making tabbouleh salad might different with others because we used couscous grain to make tabbouleh while some used bulgur. Usually there are chopped tomatoes in tabbouleh, but I run out of tomato in the fridge, so I use bell pepper instead of chopped tomatoes.



TABBOULEH

Ingredients;

250g couscous grain
5-6 pre-cooked prawns, optional
1 onion, chopped
1/2 cucumber, chopped
1/2 bell pepper, chopped
1 cup green peas
1 small canned sweet corn, drained
Some fresh mint leaves, chopped
Juice of 1 lemon
Olive oil, salt and pepper

METHOD;

- Prepare the couscous grain as per package direction.
- Separate the grains by roughing them up with a fork.
- Mix all ingredients in a large bowl and add lemon juice and season with olive oil, salt and pepper, toss well.

Endive Salad

Bonjour,

Ouf, was quite long enough for me not to update anything here. It's not that I'm too busy with my work, I just don't feel there's a best time to write things. We'll have a good long weekend this week and I decided to update one or two recipe or perhaps more. We'll see!



I'm not really a salad lover, it's depend of the salad, if it a papaya or mango salad then I'd love so much. But, I discovered not long ago that I like endive salad, made by mon mari, it was so good and I love it since then. I had this salad almost everyday since there are endives season and would make the most of it. Simple and healthy yet so delicious. Without any specific ingredients or measurement, just chopped salads and mix things up.


ENDIVE SALAD

Ingredients;

Endives, thinly sliced
Hard boiled egg
Precooked prawns
Olive oil
Lemon juice
Dill
Salt and pepper

METHOD;

- In a large bowl, combine all ingredients, stir in dill and season with salt and pepper. Toss to coat and serve.

Beetroot Salad

Bonjour,

I am not a biggest fan of salad but sometimes I do enjoy a good bowl of mixed salad like beetroot, mango or cucumber salad. Most people knows how to make a salad, just like me, I mix it up everything in a bowl without any specific measurement because everyone has a different tastes and different ways of doing things. Feel free to experiments by adding any beans or vegetables and make our own beetroot salad at home.

This is my beetroot salad version, sometimes I add boiled potato and tuna in it but at the end everything is depend on the individual's preference and tastes. It's simple and it's a great way to use up leftover vegetables in the fridge.




BEETROOT SALAD

Ingredients;

Beetroot
Green salad
Carrot
Corn
Shallot
Salt and pepper

For the sauce;
Ketchup
Mayonnaise
Salt and pepper

METHOD;

- Mix up all the ingredients in a large bowl and season with salt and pepper.
- In a small bowl, mix together all the sauce ingredient and toss salad with ketchup mayonnaise sauce.

Enjoy the beetroot salad!

Spicy Fruit Salad

Hello,

Spicy fruit salad or we called it "rojak" one of the popular salad in certain country like Singapore and Indonesia. Rojak means everything is mixed up in one bowl with assorted fruits and vegetable like pineapple, cucumber, mango, apple, beansprouts and served with special homemade rojak sauce. My mom loves these spicy fruit salad and I used to make in a big portion for her, so she can keep in the fridge and eat whenever she wants.

This rojak taste quite unique and special, some people might not like it but for those who like to discover Asian food, these spicy fruit salad is a must try!




SPICY FRUIT SALAD

Ingredients:-

4 tablespoon dark soy sauce
4 tablespoon sweet chilli sauce
1 teaspoon chilli paste or chilli powder
2 tablespoon palm sugar/ brown sugar
2 tablespoon water
1/2 teaspoon prawn paste, optional
Sugar to taste
Sesame seed
Crushed peanut
Assorted fruits and vegetable (pineapple, mango, cucumber, beansprouts, fried tofu etc..)

METHOD:-

- To make the sauce, mix all ingredients in a saucepan except cornflour paste, peanuts, sesame seeds and fruits.
- Bring to boil over low heat and stirring constantly until the sauce thickens slightly. Add more sugar if needed.
- Remove from the heat and add in sesame seeds, allow to cool.
- Cut all the fruits into bite-size and mix all together.
- Pour the sauce over the fruit and toss gently to mix well.
- Sprinkle with crushed peanut and serve.

Lao-Style Spicy Cucumber Salad

I remember eating salads quite often when I was in Laos few years ago. Papaya and cucumber salad are my favourite among other wonderful Laotion salad. Lao-style cucumber salad or called as tum mark dang is delicious and it's perfect to eat with sticky rice. Steamed sticky rice is a staple dish for Laotion and these dish available almost everywhere in Laos.

I've made Lao-style cucumber salad and steamed sticky rice this afternoon just because I craved for these dish since last month. It feels so good to get the tastes of Lao dish once in a while.




LAO-STYLE SPICY CUCUMBER SALAD

Ingredient;

1 cucumber
1 tomato or cherry tomatoes, sliced
1 clove garlic
1-2 Thai chillies
1 tablespoon palm sugar/ brown sugar
1 tablespoon lime juice
1/4 teaspoon shrimp paste
Fish sauce to taste

METHOD;

- Peel the cucumber and shredded, set aside.
- Place the garlic, chillies, sugar, lime juice and shrimp paste in the mortar and pound roughly.
- Add the shredded cucumber and tomatoes and gently pound and stir through with the pestle and spoon. I pound little by little because I had a small mortar.
- Season with fish sauce and add more lime juice if needed and gently mix everything.
- Serve with sticky rice and green salad.

Japenese Style Cucumber and Cabbage Salad

Few years back, I've learned a little bit of Japanese language and during the time I could speak a little Japanese but now I just remember a few basic words. It was a long time ago and without speaking and hearing the language, it can dissappear and forgotten as quickly as it came.

I like Japanese language even though I'm not a fan of Japanese food but in some dishes, Japanese food was really good. The reason I don't eat much of Japanese food because I don't like raw food like seafood and meat. I don't mind fish as long as the meat is well cooked or fried. Simple Japanese style salad can be good and perfect for appetizer or as a side dish. These cucumber and cabbage salad was so easy to prepare and the most important thing, they are fresh and healthy.


JAPANESE CUCUMBER SALAD

Ingredients;

1 cucumber
Salt
Sugar
Rice vinegar
A few drop of soy sauce, optional
Sesame seeds

METHOD;

- Thinly slice the cucumber and sprinkle with salt.
- Add other ingredient and season to suit taste. Mix well.
- Let the cucumber salad set in the fridge for a while and sprinkle with sesame seeds before serve.



JAPANESE CABBAGE SALAD

Ingredients;

1/4 medium white cabbage, shredded
1/2 carrot, shredded
4-5 tablespoon rice vinegar
1-2 tablespoon sugar
1 tablespoon mayonaise
Salt
Sesame seeds
Sesame oil

METHOD;

- Marinate shredded cabbage with salt for at lesast 1 hour. Rinse with water and drain.
- In a small saucepan, heat up the vinegar, sugar, mayonaise and a pinch of salt for 2-3 minutes.
- Pour the sauce into shredded cabbage and shredded carrot, add more salt or sugar if needed to suit the taste.
- Add a few drop of sesame oil and mix well.
- Let the cabbage salad set in the fridge for a few hours and sprinkle with sesame seeds before serve.

Mango Salad

Hello,

Everytime I saw mango selling quite cheap in supermarket, I'm sure I will grab one or two and if the mango taste good, I would return to the shop and buy more. I love mango, raw or ripe, there are always something I could do with it.

This mango salad suitable for lunch or dinner and it was so easy to prepared, taking only a little time and all are thrown together in just a few minutes. This kind of salad often like I'll always want to eat more because they are delicious and refreshing. Spicy or not, either way is absolutely delicious and this mango salad should taste a little bit sweet, sour and salty.



MANGO SALAD

Ingredients;

1 mango, unripe or half ripe
2 shallot, sliced
1 big red chilli, sliced
1 small bird eye chilli, sliced
1-2 tablespoon fish sauce
1-2 tablespoon brown sugar
Lime juice, from 1 lime

METHOD;

- Shredded mango and mix all ingredients and toss well. taste with fish sauce and brown sugar.
- Garnish with coriander leaves.

Thai-Style Prawn Vegetables Salad

Nowadays, weekends for me are more spending time on cooking and baking because our works need us to be in the city and most of the time we stay there during the weekdays and coming home for the weekend. Saying that, our weekends are only the time for us to indulge, rest, go anywhere for brocante and eating anything we want.

We ate out for dinner everywhere on weekdays and some dish that I've tried in restaurant inspired me to create some of my own. My simple version of salad dish, it just something simple and easy to make. There is no specific measurement and particular ingredients in this recipe, just add what I want and what I had in my kitchen.



THAI-STYLE PRAWN VEGETABLES SALAD

Ingredients;

Cooked prawns
Cabbage or lettuce salad
Red onion
Cherry toamatoes
Red big chilli
Coriander leaves
Mint leaves
Lime juice
Thai fish sauce
Brown sugar

METHOD;

- Slice the salad, red onion, cheery tomatoes, chilli and mix all ingredients together and taste with fish sauce and brown sugar. as simple as that.
