Spéculoos Cheesecake

Bonjour,

I've made mango cheesecake few months back and recently I made another cheesecake but with spéculoos. This no bake spéculoos cheesecake is made with spéculoss biscuit base and spéculoos spread mix with cream cheese, in fact this spéculoos cheesecake similar to the Nutella cheesecake.



Making cheesecake is not difficult, but the waiting time for the cheesecake to be set in the fridge can be quite long indeed! Though it takes a little time to make a wait, but it's worth the effort because this spéculoos is delicious.



SPECULOOS CHEESECAKE

Ingredients;

250g Lotus speculoos biscuits
80g butter, melted
450g cream cheese/mascarpone
80g powder sugar
200g speculoos spread
200ml heavy cream

METHOD;

- Prepare springform pan with a parchment paper around, set aside.
- Using a food processor to blitz or crush the speculoos biscuits into fine crumbs.
- Mix with melted butter, stir to combine and spread the crumb mixture into prepared pan, press firmly. Transfer to the fridge while making cheesecake filling.
- Using a stand or hand mixer, combine cream cheese, sugar and speculoos spread and mix until smooth.
- In another mixing bowl, beat the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture, mix well.
- Spread the mixture over the biscuit base and chill in the fridge for at least 4 hours or overnight.
- For the topping, melted 150g speculoos spread and pour over the cheesecake, continue to refrigerate until set.

Eggless Tiramisu

Bounjourno,

I'm a fan of tiramisu but to be honest, I'm not a fan of raw eggs and using them in dishes. I wouldn't mind to order tiramisu in restaurant even they used raw eggs in the recipe but for me personally, I prefer making tiramisu without eggs.


I often make this dessert especially when we have dinner with family or friends. This eggless tiramisu is the desserts for everyone to enjoy! I sure everyone likes it.



EGGLESS TIRAMISU

Ingredients;

250g mascarpone
2 tablespoons caster sugar
200ml heavy cream
About 20-30 sponge fingers
200ml  coffee

METHOD;

- Place the mascarpone and sugar in a bowl. Beat with an electric mixer until soft and creamy.
- Add the heavy cream, beat until light and fluffy.
- Dip the lady fingers in cold coffee, one at a time and place in a serving dish or glass.
- Cover with half of the mascarpone cream, spreading it out evenly.
- Arrange another layer of ladyfingers and cover the remaining mascarpone.
- Refrigerate for at less 4 hours and dust with cocoa powder before serving.

No Bake Oreo Cheesecake

Hello,

It seems that the longer lockdown goes on, the more I'm addicted to cooking and baking but not too much eating though, because most of the time I cook or bake things in smaller portion, I sometimes give some of the cakes to our neighbour too.


In this situation, it sure that everyone staying at home means everyone's cooking, baking and making more dessert especially for kids. So, let's make an Oreo cheesecake!




NO BAKE OREO CHEESECAKE

Ingredients;

20 Oreo cookies
50g butter, melted
250g cream cheese/ mascarpone
200ml heavy cream
50g sugar
1 teaspoon vanilla extract

METHOD;

- Grind or crush Oreo into fine crumbs. Mix with melted butter and press evenly into spring form pan, chill.
- In a mixing bowl, using a stand or hand mixer, beat heavy cream and sugar until stiff peaks form.
- Add in cream cheese and vanilla extract, mix until well combined. Fold in some crusted cookies.
- Pour cream cheese mixture into prepared pan and chill for at least 6 hours or overnight.

Enjoy Oreo cheesecake!

Mango Cheesecake

Salut tout le monde,

I've been thinking of making a mango cheesecake lately and yesterday I made an easy no bake mango cheesecake since mangoes are quite cheap right now. Making this mango cheesecake are not too complicated, it just requires a few step and wait at least few hours or overnight for the cheesecake to set in the fridge before they can be eaten.



Mango cheesecake, a combination of cream, cream cheese and fresh mango, one refreshing dessert that we can enjoy with family and friends.



MANGO CHEESECAKE

Ingredients;

1-2 mangoes, depend on the size
200g graham crackers or plain sweet biscuits
80g salted butter, melted
400g cream cheese
200g heavy cream
50g sugar
5g agar-agar powder
1 tablespoon sugar
1/4 cup water

METHOD;

- Put the biscuits into plastic bag, crush with rolling pan or use a food processor and process until find crumbs. Pour in the melted butter, mix well and press over base prepare pan. Refrigerate while preparing filling.
- Blend the mangoes into fine puree, set aside.
- Using a stand or hand mixer, beat cream cheese and sugar until smooth. Add 2 tablespoon mango puree and mix well.
- In another bowl, beat the heavy cream until stiff peaks.
- Fold whipped cream into cream cheese mixture and pour over the biscuits base. Refrigerate for 1-2 hours.
-  For the mango jelly, mix agar-agar powder, sugar and water and bring to a boil until agar-agar dissolved or prepare as per packet instruction.
- Mix the agar-agar mixture with reserved mango puree. Pour over cheesecake filling and refrigerate for at least 4 hours or overnight.

Enjoy the delicious no bake mango cheesecake!

Cookie And Cream Cheese Layered Cake

Since we have a quite difficult situation right now because of coronavirus that spread around the globe, I believe that most of us would stay at home as a precaution and avoid contact with people as much as possible. We just need to give a full cooperation and follow the advice that given by our government as well as everyone must practise good hygiene to protect against infection and prevent the virus from spreading, protect our self and others, as simple as that.


I have not updating or posting anything here since January and now it's time to do so. I've made a few very simple no-bake dessert recently and it seems I have to do it again because someone really like the cookie and cream cheese layer cake. It had tasted like no-bake cheesecake, so easy and yet so yummy!




COOKIE AND CREAM CHEESE LAYERED CAKE

Ingredients;

1 or 2 packet graham cracker/ petit beurre
250g mascarpone or cream cheese
200ml heavy cream
1/2 cup condensed milk
1 cup milk

METHOD;

- Beat the heavy cream until soft peak, add mascarpone and condensed milk, mix well.
- Soak the cracker/cookie in the milk for a second and arrange them in the pan.
- Spread some of the cream cheese mixture over the crackers and repeat the next layer until its finish.
- Sprinkle the top with the cereal nestum or any chocolate or cookies decoration as desired.
- Refrigerate for at least 4 hours or overnight before serve.

Baked Cheesecake

I've made this classic cheesecake quite a few times over the years and these basic cheesecake recipe so easy to make. Nothing fancy yet the taste was good with the salted caramel sauce on top. I used speculoos cookies for the cheesecake base and I used salted butter in most of my cooking. For me salted butter is much better than non salted butter.

I'm sure everyone can make this easy baked cheesecake and has their own recipe and the taste even better than mine. Perhaps one day I should try another cheesecake recipe.



BAKED CHEESECAKE

Ingredients;

150g speculoos cookies, crumbs
70g melted butter
400g cream cheese/ Philadelphia
100g heavy cream/ white cheese
100g sugar
2 eggs
1 teaspoon vanila extract

For the salted caramel;

80g sugar
12cl sour cream/ heavy cream
50g butter
A pinch of salt

METHOD;

- Preheat oven 180° and prepare baking pan.
- Mix evenly melted butter and speculoos crumbs and press the mixture into prepare baking pan.
- Bake for 8-10 minutes and let it cool while preparing the filling.
- Beat cream cheese, heavy cream on a medium low speed and add sugar.
- Add eggs and vanila and mix just until everything well combined.
- Pour the filling into the cooled cookies pan and bake for 30-40 minutes or until the cheesecake are slightly cooked.
- Let the cheesecake cool before refrigerate for at least 4 hours or overnight.

To make salted caramel;
- Heat sugar in a medium saucepan over medium heat until the sugar melted
- Carefully add butter and stir until the butter are completely melted.
- Slowly add cream and let it boil for a minute. Add salt and remove from heat.
- Allow to cool before using.

Cheesecake Swirled Brownies

For a couple of week now I have been making and testing few recipes of brownies. These brownies look like the perfect way to celebrate this week. Yesterday was our anniversary, so I made a cheesecake brownies which are our favourite combination and my cake turned out great!

Actually this cake need to freeze for at least 2 hour to set before cutting, but I cannot wait that long to try them that's why my cheesecake brownies looks little bit messy when slicing. Eventhough they are bit cracked in the middle but the cake probably taste amazing. For some cakes like cheesecakes, not only do the cakes look good, but they taste even better one day after it's made.

CHEESECAKE SWIRLED BROWNIES

Ingredients:

For the brownies:-
110g butter
220g sugar
2 eggs
1 teaspoon vanilla extract
80g cocoa powder
1/2 teaspoon baking powder
90g flour
50g chocolate chip or dark chocolate chunk


For the cheesecake:-
200g cream cheese
1/3 cup plain yogurt
1/2 sugar
1/2 teaspoon vanilla extract
1 egg

METHOD:

- Preheat oven 180° and prepare baking pan and line with baking paper, set aside.
- Melt butter and sugar in the saucepan over medium heat until bubbly, whisking occasionally.
- Allow to cool 10 minutes. Add egg and vanila and stir until smooth.
- Add cocoa powder, baking powder and flour and mix well to combined.
- Stir in chocolate chip and pour into prepared baking pan.
- In the separate bowl, combine and whisk together cream cheese, yogurt, sugar, vanilla and egg until smooth.
- Pour the cheese mixture over brownies batter and swirl gently with a knife.
- Bake for 30-40 minutes or until skewer comes out almost clean.
- Allow to cool and refrigerate for at least 2 hour or over night.

Cheesecake Brownies

Bonsoir a tous,

I have not been updating my blog for quite some time now, or maybe I'm still in the holiday mood. But this afternoon I managed to make Cheesecake Brownies and this was my first attemp at making brownies. Easy to make and tastes great! This was a fun cake to bake and I'm sure I'll do it again next time. Half of this cake will be for our friend's birthday tomorrow. Just want to surprise her with a mini birthday cake and I'll do some decoration on it.

I will post more cake recipe in the future but for this time let's have a look the Cheesecake Brownies recipe below.



CHEESECAKE BROWNIES

Ingredients:

150g butter
300g dark cooking chocolate, chopped
3 eggs
215g sugar
225g flour
70g plain yogurt
250g cream cheese

METHOD:

- Prepared and grease the cake pan and preheat oven to 180°.
- Combined butter and chocolate in a saucepan over low heat. Cook and stirring until chocolate melt and smooth. Remove from heat and set aside for 5 minute.
- Whisk 2 eggs in a small bowl. Add egg and 140g of sugar to the chocolate mixture and stir to combine.
- Add flour and yogurt and stir until well combined.
- In another bowl, beat cream cheese and remaining sugar until smooth. Add the remaining egg and beat until just combined.
- Spoon half of chocolate mixture over the cake pan. Then put scoops and layer each of chocolate and cheese mixture and swirled it through with a toothpick.
- Baked for 40-45 minutes or until skewer comes out clean.

Layer Biscuits Cheesecake

Time flies so fast. It's July now and summer holiday is here again. We will be taking a summer vacation soon and it's time to take a break, rest and relax at least for few weeks. And yes, perhaps there are also times to take a rest from blogging...

Alors, few days ago I've made this Layer Biscuits Cheesecake for third time now. Somewhere I think the method of this layer cheesecake quite similar as Tiramisu, instead of using ladyfinger biscuits to dip with coffee, this recipe use butter biscuits to dip with milk. The recipe is very simple and easy to prepare. It may look messy and imperfect when slicing but the taste I'm sure will not be disappointed!



LAYER BISCUITS CHEESECAKE

Ingredients:-

2 packet butter biscuit or any kind of biscuit flavour
400gm cream cheese
1/2 can sweetened condensed milk
1 cup warm milk
1/2 cup cereal or shredded cheese for topping

METHOD:-

- Beat cream cheese and condensed milk untill smooth.
- Dip the biscuits into warm milk for a second and arrange in the cake pan.
- Spread the biscuits with the cream cheese and drizzle with cereal all over the cheese layer.
- Repeat the layering process again until finish.
- Cover with wrapping and refrigerate for at least 3-4 hours.
