Tuna Lasagne

Bonjourno,

We eat tuna lasagne at least once a week and this dish is perfect for weekend meals. Nothing complicated in making lasagne, just a few steps but that's not difficult at all. Enjoy this meatless lasagne, all the family and friends will love it.


For those who don't eat too much meat of fatty foods, try this tuna lasagne, I'm sure it won't be disappointed.



TUNA LASAGNE

Ingredients;

2 onion, chopped
1 garlic cloves, chopped
1 red bell pepper, diced
1 carrot, diced
1 tomato, chopped
1 canned tomato sauce
1 canned tuna, drained
Lasagne pasta sheets
Salt and pepper to taste

For the white sauce;
2 tablespoons butter
1-11/2 cup milk
2 tablespoons flour
100g grated cheese
70g parmeson cheese

METHOD;

- Heat some oil in a saucepan and fry onion and garlic until fragrant.
- Add the bell peppers, carrots and tomatoes. Cook for a few minutes.
- Add in tomato sauce and tuna, continue to cook for another 5-10 minutes or until the sauce is reduced. Season with salt and pepper.
- For the white sauce, melt butter in a saucepan over low heat.
- Whisk in the flour and stir until the mixture become paste about 2-3 minutes.
- Gradually add in milk little by little and continue to whisk until the sauce is smooth. Season with salt and pepper.
- Remove from heat and stir in both cheese.
- Spread a thin layer of tuna mixture onto base of baking dish, followed by a layer of lasagne sheets.
- Spoon another 2-3 tablespoons of tuna mixture and spread some white sauce on top and layer with lasagne sheets.
- Repeat the tuna layering and finish by tuna and white sauce on top.
- Bake in the preheated oven at 180° for 35-40 minutes.

Mamak Style Fried Noodles

Hello,

Apart from rice, noodles are also staple foods in Asia. Fried noodles, noodles soup or crispy noodles, just name it, Asian people just love noodles. In Malaysia and Singapore, mee goreng mamak is one of the dish that people can't get enough of.


This fried mee mamak can be found easily in Indian or Malay restaurant. In Penang, mee mamak is a famous street food and a visit to Penang is not complete without trying their mee mamak and other Penang specialty.



MAMAK STYLE FRIED NOODLES

Ingredients;

Half packet spaghetti or yellow noodles (for 2 persons)
1 shallot, thinly sliced
2 clove garlic, sliced
1 onion, sliced
1 bunch pak choy or choy sum
1 potato, cut into cubes
1 tomato, sliced
1 egg

For the sauce;

1 tablespoon chili paste
1 tablespoon fried or roasted peanuts
2 tablespoon tamarind paste
2-3 tablespoons dark soy sauce
2-3 tablespoons light soy sauce
2-3 tablsepoons ketchup
2-3 tablespoons sweet chili sauce
Salt and pepper to taste

METHOD;

- Prepare the spaghetti as per packet direction or use fresh yellow noodles, if any.
- Prepare the sauce by mix together chili paste, peanuts and tamarind paste, blend into a fine paste, set aside.
- Heat some oil in a wok or frying pan, fry potatoes until tender, set aside.
- Use the same oil, fry shallot and garlic until fragrant.
- Add the chili paste and fry until the oil separates, about 1-2 minutes.
- Add in onion, pak choy and noodles, stir fry for a few seconds.
- Add the other sauce, dark and light soy sauce, ketchup and sweet chili sauce, stir well.
- Add potatoes and tomatoes, season with salt and pepper. Add some more water if it's too dry.
- Push the noodles aside, add little oil and crack the egg on it, let it set for a few seconds.
- Toss and cook for 1-2 minutes or until heated through.

Spaghetti Aglio E Olio

Buongiourno,

When it comes to Italian food, one of my favourite pasta dishes is spaghetti aglio e olio. I am pretty sure everyone knows spaghetti aglio e olio right? It's so easy yet it tastes so good. I like to add some seafood like prawns and mussels in my spaghetti but even without anything on them, spaghetti aglio e olio simply delicious!


Let' cook spaghetti aglio e olio for dinner!



SPAGHETTI AGLIO E OLIO

Ingredients;

Half package spaghetti, for 2 person
A handful of prawns, optional
3 cloves garlic, sliced
1 dried red chili, chopped
A small handful of fresh parsley or dried parsley
Olive oil
Salt and pepper to taste

METHOD;

- Cook pasta as per package direction.
- While pasta is cooking, in another pan, heat olive oil over medium heat, add garlic and chili, cook until garlic turn to light brown.
- Add prawns (if any) and parsley and cook for another minute.
- Add the cooked pasta into the pan and toss until well coated. Season with salt and pepper. Add a little bit of pasta water if needed.
- Serve with grated parmigiano-reggiano.

Malay-Style Fried Spaghetti

Hello,

Finding fresh yellow or rice noodles here is a real challenge and almost impossible. Even if I found it in Asian grocery store, they are often sold frozen and of course its not the same texture and taste anymore. So, the only solution for me whenever I want to eat fried noodles is by using spaghetti. I don't expect they will be the same texture like Malaysian fried yellow noodles, but at least I can be satisfied and sure that it tastes good as well.



MALAY-STYLE FRIED SPAGHETTI

Ingredients;

1/2 packet spaghetti pasta
1 shallot, sliced
2 cloves garlic, sliced
1/2 tablespoon chilli paste, optional
1 egg
1 handful bean sprouts
1 tomato, cut into cube or wedges
Tomato ketchup
Light soy sauce
Dark soy sauce
Salt and pepper to taste

METHOD;

- Cook the spaghetti follow the package direction. Set aside.
- Heat up some oil in a work or pan and fry shallot and garlic until fragrant.
- Add chilli paste and fry for a few second.
- Crack the egg let it cook a while before scramble it.
- Add cooked spaghetti and bean sprouts.
- Season with ketchup, light and dark soy sauce and salt and pepper.
- Add in tomatoes, toss everything together for a couple of minutes before serving.

Malay Style Fried Bee Hoon

Hello,

Fried noodles either rice noodles, yellow noodles or ramen noodles are popular almost everywhere. There are many way to cook noodles, fried, soup, dry or wet noodles and their are all comes with a great tastes. Sometimes the simple fried noodles can be satisfying, and I prefer when they are simple but taste good.

I usually prepare my fried beehoon as simple as village style people prepare their food. So this fried bee hoon Malay style is our normal way to cook fried bee hoon at home. We can adding meat, seafoods or vegetables depending on individual preferences, it works in anything!



MALAY STYLE FRIED BEE HOON

Ingredients;

1/2 packet dry rice vermicelli
4 cloves garlic, sliced
1 shallot, sliced
1-2 small chillies, optional
2 tablespoon dry shrimp, soak in warm water for a few minute, chopped
1 egg
Light soy sauce
Salt

METHOD;

- Soak the rice vermicelli in a warm water for 30 minute or until soft and drained
- Heat little oil in a wok and sauté garlic, shallot and small chillies until fragrant.
- Add dry shrimp and continue to fry for a minute.
- Add in the egg and cook like scramble.
- Add the rice vermicelli and season with soy sauce and salt.
- Stir fry the noodles for a few minutes, add a little water if desire and cook until everything mix together.
- Served with a squeeze of lime or extra chili on the side.

Egg Fried Noodles

I love to cook egg fried noodles since I was a teenager. Until now, I make fried noodles quite often for my family back in my hometown because this dish it's something everyone can enjoy together. Fried noodles are always been my choice especially during afternoon tea with family.

When it comes to Asian cuisine itself, in many event, in the restaurants or in the street food stalls, the two main dishes are often rice and noodles.

This simple mee goreng telur or egg fried noodles are one of my all time favorite noodles. Everyone can do it, so let's cook this simple fried noodles.



EGG FRIED NOODLES

Ingredients;

1/2 packet dry chinese noodles (for 1-2 person) prepare as per package direction
I onion, sliced
2 cloves garlic, sliced
1-2 red chilli, optional
1 egg
Light soy sauce
Dark soy sauce
Salt and pepper to taste

METHOD;

- Heat up little oil in a wok or saucepan and fry onion and garlic until fragrant.
- Add chilli and crack the egg, let it cook a while and scrambled.
- Add the noodles and stir-fry for a minute.
- Season with light and dark soy sauce and taste with salt and pepper.
- Stir well and cook for another minute.
- Serve with another fried egg on top and voila, mee goreng ready!

Crispy Fried Noodles

Bonjour,

I remember having this crispy fried noodles a long time ago but never tried to make it until now. Well, I tried to make these crispy noodles few days ago and mon mari is happy because he keeps mentioning about this noodles but he wasn't sure how to cook it.



CRISPY FRIED NOODLES

Ingredients:

Half packet Chinese egg noodles (for 2 person)
2 cloves garlic, chopped
1cm ginger, chopped
1 onion, sliced
200g prawns
1 carrot, sliced
4-5 baby corn, sliced
A handful Chinese green vegetables
1 cup chicken stock or water
1 tablespoon oyster sauce
Salt and pepper to taste
1 tablespoon corn flour, dissolved in 2 tablespoon water
A few drop of sesame oil

METHOD:

- Cook noodles follow the package direction. Drain thoroughly.
- Heat enough oil into a wok and carefully put half of the noodles and cook until crispy both side.
- Remove using a slotted spoon and transfer noodles on a serving plate. Repeat the process with the remaining noodles.
- For the sauce, heat little oil in a wok or saucepan and fry garlic, ginger and onion until fragrant.
- Add prawns, carrots and baby corn and continue to fry for few minutes.
- Add chicken stock or water and bring to boil and simmer for 2-3 minutes.
- Add green vegetables and season with salt, pepper and oyster sauce.
- Lastly, add cornstarch and a drop of sesame oil and cook until sauce thickens.
- Pour sauce on top of fried noodles and voila..

Hokkien Mee

Bonjour,

Hokkien mee or hokkien noodles is a thick yellow noodles which is popular not only among Chinese in Malaysia or Singapore, but for Malays and Indians as well. Made these hokkien mee few times and the noodles itself is tasty and not dry at all and it is flavorful.



HOKKIEN MEE

Ingredients:

1 small packet fresh yellow noodles (for 2 person)
8-10 fresh prawns
1 cup Chinese cabbage, sliced
1 cup Chinese green vegetables/choy sum
2 cloves garlic, chopped
1-2 tablespoon dark soy sauce or thick caramel sauce
1 tablespoon light soy sauce
2 tablespoon oyster sauce
1 cup chicken stock or water
Salt and pepper to taste
Oil

METHOD:

- Heat little vegetable oil in wok and fry garlic until fragrant.
- Add prawns and stir for 1-2 minutes.
- Add Chinese cabbage, chicken stock or water, soy sauce, light soy sauce and oyster sauce. Allow to cook for a minute.
- Add noodles and Chinese green vegetables and season with salt and pepper. Simmer until noodles are tender and the sauce starts to thicken.
- Served hot with green chilli pickles.

Curry Mee

When it comes to the noodle soups, almost every state in Malaysia have their own specialty noodles soup. Curry mee or curry laksa also come with different types of noodles depends on the regions and individual preferences. Curry mee is one of the delicious curry noodle soup with a coconut milk curry gravy and served with variety of toppings.

I've made this curry mee few days ago and we liked it so much. I started with a simple recipe for the curry soup and it turned out pretty good and so worth it.



CURRY NOODLE SOUP/ CURRY MEE

Ingredients:

1 packet yellow noodles (for 2-3 person)
200g prawns (chicken or other seafood)
A bunch of pak choy
A handful of bean sprouts
2 hard boiled egg
2 tablespoon curry powder, mix with little water
2 shallot, chopped
2 cloves garlic, chopped
2cm ginger, chopped
1 small cinnamon stick
1 star anise
2 cardamom
2 cloves
2 spring curry leaves
2 cup coconut milk
1-2 cup water
Salt and sugar to taste

METHOD:

- Blanch the noodles in the big pot of boiling water for 1-2 minutes. Drain, rinse and set aside.
- Blanch the bean sprouts and pak choy, set aside.
- Heat little oil in a large pot and fry garlic, shallot and ginger until fragrant.
- Add in cinnamon, anise, cardamom and cloves, stir for a minute.
- Add curry paste and curry leaves, continue to stir for 2-3 minutes. Add little bit water if desire.
- Add the prawns and water and bring it to a boil for a few minutes.
- Stir in coconut milk and taste with salt and sugar and let it boil again for another minutes.
- To serve, add some noodles to a bowl, top with the curry soup on top and garnish with vegetables and hard boiled egg.
- Squeezed with lime and chilli if desired.

Seafood Kolo Mee

Bonjour,

Chinese New Year is here! I would like to wish a very happy Chinese New Year to those Chinese people celebrating the New Year and happy holiday! It's also common to hear people say 'Gong Xi Fa Cai' in Asia during Chinese New Year festival.

Talk about the Chinese New  Year, one of the famous noodles among the local Chinese in Sarawak, Malaysia is kolo mee. Kolo Mee is a simple but popular Sarawakian noodles dish, traditionally served with sliced of roast pork, minced chicken or beef and available almost everywhere in Sarawak. I used seafoods to topped on my noodles instead of minced beef.

This is my style of kolo mee using shallot oil and I know this is not the original kolo mee style but the taste is satisfactory and it's simply delicious.



SEAFOOD KOLO MEE

Ingredients:

1/2 or 1 packet dried egg noodles (fresh is better)
Handful of choy sum
4 shallot, sliced
2 tablespoon light soy sauce
1 tablespoon dark soy sauce
1 tablespoon oyster sauce
1 teaspoon sesame oil
1/4 cup oil
Salt, pepper and sugar to taste
Fried seafoods (fish and prawn)

METHOD:

- Heat oil in a wok or pan and fry shallot until golden brown and crunchy.
- Remove the fried shallot in a bowl and leave some shallots in the remaining oil in the wok.
- Using the shallot oil, add in about 1/4 of water, soy sauce, oyster sauce, sesame oil, salt, sugar and pepper and bring to a boil until sauce thickens slightly. Keep aside.
- Meanwhile, cook egg noodles follow the packet direction. Set aside.
- In the same pot of water, blanch the choy sum for 1-2 minutes.
- In a large bowl, add all the sauce and cooked noodles, mix and coat well.
- Separate the noodles onto serving plate, garnish with choy sum, fried seafood and fried shallot.

Fried Glass Noodles

I used to eat fried glass noodles when I was abroad quite often few years ago. These noodles can be stir fried, can be used in soup or can be used to make a salad as well. I liked stir fried noodles with lots of vegetables and spicy taste of cause. For me personally, it taste great when it's spicy.

This fried glass noodles is a simple dish that I prepare for lunch or for dinner sometimes. Usually I don't add crab sticks but since I have some left in the fridge, so I add crab sticks.



FRIED GLASS NOODLES

Ingredients:

1 small pack of glass noodles
1 red onion, sliced
1 carrot, thinly sliced
5 crab sticks, halved
1 egg
2 cloves garlic, chopped
2 red chillies chopped, (optional)
2 tablespoon light soy sauce
1 tablespoon ketchup or chilli sauce
Salt and pepper to taste
Oil for frying

METHOD:

- Soak the glass noodles in warm water for 20 minute or until soft.
- Heat little oil in frying pan and fry garlic and chilli until fragrants.
- Add in carrot and onion and cook for 1-2 minutes.
- Crack in the egg and scramble the egg until half cook.
- Add in the glass noodles and the sauce, soy sauce and ketchup.
- Stir and mix well on a low heat for a few minutes.
- Add in crab sticks and season with salt and pepper.
- Dish out and serve with squeez of lemon.

Noodles Soup / Mee Soto

Salut a tous,

Mee soto or spicy noodles soup is one of the most popular dish in Indonesia or Malaysia. The soup usually made from beef or chicken broth and served with rice noodles or yellow noodles. It comes with some garnishing like hard boiled egg, fried onion and bean sprouts. Since I live so far away from my hometown, soto is the things I miss the most.

Last months, I've made my own version of soto recipe but without meat. It was so great that we ate this soto two days in a row. I'm just thinking of making it again in the next few days. What I liked the most when eating soto is to mix them with hot chilli and soy sauce.

Here is my vegetarian version of mee soto recipe and the picture shown below taken in two days with different garnishing in it. I'm so happy that I managed to cooked soto at home.




NOODLES SOUP / MEE SOTO

Ingredients:

1/2 packet rice vermicelli
2 potato, cut cubed
2 carrot, cut cubed
2 cloves garlic, chopped
1 shallot, chopped
2 inch ginger, chopped
1 liter water or more as desired

All spices:
2 pcs star anise
2 pcs cardamom
1 small stick cinnamon
2 pcs cloves
1 teaspoon coriander seed
1 teaspoon fennel
1/2 teaspoon cumin
1/2 teaspoon white pepper

METHOD:

- Soak the rice noodles a warm water until soft about 20-30 minutes. Drain and set aside.
- Heat up some oil and fry garlic, shallot and ginger until fragrant.
- Add all spices and fry for a few second and add in potato and carrot.
- Add in water, bring to boiled and cook until potato and carrot soft for about 30-40 minutes
- Taste with salt and pepper.
- Prepare the noodles in a serving bowl and pour the hot soup over the noodles.
- Garnish with some hard boiled egg, fried onion, spring onion, cucumber or bean sprouts.
- For additional, optional and better taste, add some lemon juice, soy sauce and chopped chilli and mix together with the noodles soup.

Italian Spaghetti With Prawns

A new month starts today and we are in November right now. Can't believe how quickly the days flew by. No matter how much time passes and no matter where we are or go, our life is beautiful! Enjoy every bit of life to the fullest.

I will start my post today with pasta recipe that I made few days ago. Mon mari enjoyed this pasta as much as I do. Even though spaghetti pasta is not his favorite, but this one is exceptional. Even there is the optional of dry chilli in this recipe, but the taste still not really spicy, so don't worry.



ITALIAN SPAGHETTI WITH PRAWNS

Ingredients:

1/2 packet dry spaghetti
2 cloves garlic, chopped
1-2 dried chilli, chopped
2 handfuls of cherry tomatoes, cut in half
200g prawn
2 tablespoon tomato puree
1 small bag of rocket salad
Salt and pepper to taste
Olive oil

METHOD:

- Boiled water and cook spaghetti according to packet directions.
- While the spaghetti is still boiled, heat a little olive oil to a frying pan and saute garlic and chilli until fragrant and golden brown.
- Add tomatoes and stir for a few minutes.
- Add prawns and cook for another minute.
- Add 1/2 cup of water and tomato puree and simmer for a couple of minutes.
- Add the spaghetti into the prawns tomato sauce and toss with rocket salad.
- Mix everything well and season with salt and pepper.
- Remove from heat and before serve sprinkle with some lemon juice or parmesan cheese and remaining rocket salad.

Singapore Fried Rice Noodles

Coucou,

Every country has its own food specialty like in Thailand with Pad Thai Noodles, and same with Singapore with Singapore Fried Rice Noodles. This dish can be found easily in Singapore or even in Malaysia. But I am not sure if this Singapore noodles originally come from Singapore itself or somewhere like Hong Kong. Because there are saying that the curried rice vermicelli dish was born in Hong Kong.

Whatever it is, the Singapore rice noodles is simply delicious because of the curry powder flavor. One of our friend has requested this dish for his birthday next year. They enjoy the food and got the flavor as well the texture was just right. I am happy their liked it.



SINGAPORE FRIED RICE NOODLES

Ingredients:

1/2 package vermicelli rice noodles
4 cloves garlic, chopped
1 teaspoon chopped ginger
1 onion, thinly sliced
1 green pepper, thinly sliced
1 yellow pepper, thinly sliced
1 egg, cooked as omelette and sliced
Oil for frying

For the sauce:
4 tablespoon light soy sauce
1 tablespoon curry powder
1 tablespoon tomato ketchup
Salt and pepper to taste

METHOD:

- Soak the rice noodles in warm water for about half in hour or until it's thoroughly softened.
- Mix the sauce together and set aside.
- Heat work with little oil and fry garlic and ginger until fragrant.
- Add onion, green and yellow pepper and fry for 1-2 minutes.
- Add the sauce and continue to fry for a minute.
- Add the noodles and egg and let it cook for another few minutes. Stir frequently.
- Served hot with some cut chilli and soy sauce.

Penne Arrabbiata with Fresh Tomatoes

Cooking pasta is simple and obviously there are many type of pasta and there are all kinds of flavors we can add to pasta. One of the famous Italian recipe is penne arrabbiata, a spicy sauce for pasta but it's easy and quick to prepare.

For the arrabbiata sauce, I'm using only basic ingredients that I have at home. There are as many recipes for tomato pasta sauce and we can use most any kind of pasta with any kind of sauce. Let's have a look of my penne arrabbiata recipe below.



PENNE ARRABBIATA WITH FRESH TOMATOES

Ingredients: (2 serving)

250g penne
1 tomato, diced
3 cloves garlic, chopped
2 dry chillies, chopped
1 teaspoon dried parsley
Salt and pepper to taste
Olive oil

METHOD:

- Cook penne according to package direction.
- Heat up a little olive oil in pan and fry garlic and chillies until aromatic.
- Add tomato and a little water and simmer for a few minutes.
- Once the tomato becomes soft and the sauce has reduce, add in penne.
- Season with salt and pepper and parsley. Mix well until penne is coated in the sauce.
- Serve hot and spinkle with grated cheese.

Pasta with Prawns Tomato Sauce

Bonsoir,

We ate pasta at least once a week at home. Italian food for instance is all about pasta and pizza. I like to cook pasta with prawns, vegetables or sometimes just pasta with tomato sauce. It's simple and easy yet delicious.

Made this pasta last week and I am trying to be a little bit creative with pasta dishes and I love recipes like this one.



PASTA WITH PRAWNS TOMATO SAUCE

Ingredients:-

1/2 packet dry tagliatelle
300gm prawns
1 shallot, chopped
4 cloves garlic, chopped
4 tablespoon tomato ketchup
1/2 teaspoon dried chilli flake or paprika
2 tablespoon chopped fresh parsley
Olive oil
Salt and pepper to taste

METHOD:-

- Cook pasta following packet directions. Drain.
- Heat olive oil in frying pan and fry garlic, shallot and chilli until fragrant.
- Add prawns and cook for 2-3 minutes.
- Add in tomato ketchup and taste with salt and pepper. Cook for another minute.
- Add pasta and parsley and toss to coat.
- Sprinkle with parmesan cheese to serve.

Fried Noodles Mamak Style

Salut a tous,

In my previous blog post, I have written about 'Mamak', and today I would post another recipe called Mee Mamak which means Fried Noodles Mamak Style. This dish commanly found in hawkers centre and almost everywhere in Singapore and Malaysia.

When I was with my family, this dish rotates almost every week at our home because mee mamak is one of my brother favorite noodles. Nothing beats the taste of noodles cooked with a sweet and spicy, salty and sourish too. Here, except that yellow noodles is a little hard to find although not impossible. I used spaghetti noodles as a substitute for the yellow noodles. This mee mamak usually comes with meat or seafood but I made this noodles vegetarian for these time.

So, here is the recipe for Mee Mamak.


FRIED NOODLES MAMAK STYLE

Ingredients:-

Half packed spaghetti
2 potatoes, peeled and cut cubes
1 onion, sliced
1 tomato, cut cubes
5-6 green spring onions
1 egg
2 cloves garlic, chopped
2 small chilli, chopped
3 tablespoon ketchup
3 tablespoon chilli sauce
2 tablespoon dark soy sauce
Salt and pepper to taste
Oil for frying

METHOD:-

- Cooked the spaghetti noodless follow the package instruction. Drained and keep aside.
- Fry the potatoes until tender but not to over cook. Keep aside.
- Heat the little oil in a wok and saute garlic and chilli until fragrant.
- Add onion and fry for a minute.
- Crack the egg and scramble them up a little than add spaghetti and potatoes.
- Add the ketchup, chilli sauce, dark soy sauce and taste with salt and pepper.
- Add the tomato and spring onion and cook for another minute.
- Served with lime or lemon wedges.

Pad Thai

Pad Thai is a one of Thailand's national dishes and most favorite noodles dishes everywhere in Asia or perhaps in the world. I made Pad Thai quite often because mon mari loved it so much especially when it served with squeezed lime or lemon. Actually is not only us loved pad Thai, but our friends also liked it. The pad Thai noodles itself had a gread texture and when the noodles are cooked right, it taste so good.

Let me share the simple Pad Thai recipe here though there are many version of Pad Thai recipe out there.


PAD THAI

Ingredients:

1 pack pad Thai rice noodles
1 carrot, cut
1 cup bean sprouts
1 stalk spring onion, sliced
1 onion, sliced
1/2 cup crush peanut
2 tablespoon dried shrimp
2 cloves garlic, chopped
1 egg
2 tablespoon light soy sauce
2 tablespoon fish sauce
Sugar, salt and pepper to taste
Oil for frying

METHOD:

- Soak noodles according to package instructions.
- Heat oil in a wok and sauteed garlic until fragrant.
- Add dried shrimp, onion and carrot and stirring constantly for a minute.
- Crack the egg and scramble until almost set.
- Add noodles, bean sprouts and spring onion. Cook and tossing constantly.
- Season with soya sauce, fish sauce, sugar and salt and pepper and mix well.
- Add the crush peanut and served hot.
- Squeezed with fresh lime or lemon

Stir-fried Noodles

Bonjour,

Few days ago, I felt I do not want to have rice for lunch or dinner, so I thought why not I make some noodles instead! I'll put two recipe of noodles here, fried yellow noodles and fried vermicelli noodles. Fried vermicelli or rice noodles also called fried bee hoon in Asia.

Actually, a plain fried noodles either yellow noodles or fried vermicelli is very easy to prepare. We could always add other ingredients like seafood, meat and any kind of vegetables to make it a one dish of delicious fried noodles.

Now, let's see the easy and simple fried noodles recipe below.

FRIED YELLOW NOODLES


Ingredients:-

1/2 pack medium chinese noodles
1 carrot, sliced
1 small bowl chinese cabbage, cut
1 small bowl bean sprouts
1 small bowl young corn, cut
1 small bowl pak choy, cut ( green vegetable)
2 cloves garlic, chopped
2 tablespoon light soy sauce
1 tablespoon oyster sauce
1 tablespoon chilli sauce or ketchup
Salt and peppet to taste
Oil for frying

METHOD:-

- Cook the noodles according to pack instruction.
- Heat the little oil in a wok and fry garlic until fragrant.
- Add in carrot, chinese cabbage, young corn and pak choy and stir fry for 2-3 minutes.
- Add the noodles and bean sprouts then continue to stir fry for a minute.
- Season with light soy sauce, oyster sauce, chilli sauce and salt and pepper, then cook for another minute.


FRIED VERMICELLI


Ingredient:-

1 pack rice vermicelli noodles (soak in water for 30 minutes, then drained)
1 small bowl bean sprouts
1 egg
2 cloves garlic, chopped
2 tablespoon light soy sauce
1 tablespoon dark soy sauce
1 tablesppon chilli sauce
1 teaspoon chilli powder or paprika
1/2 cup water
Salt and pepper to taste
Oil for frying

METHOD:-

- In a small bowl, mix together light and dark soy sauce, chilli sauce and chilli powder.
- Heat the oil in a wok and fry garlic until fragrant.
- Crack the egg in the wok and scramble lightly until the egg are cooked.
- Add in the soy sauce mixture and bean sprouts and stir for a minutes.
- Add in the rice vermicelli noodles and add a bit of water.
- Stir around and mix well to coat noodles with seasoning and taste with salt and pepper.
- Add more soy sauce and water if desired.
- Garnish with fried onion and chopped spring onion.
