Teriyaki Fish with Soba Noodles

Bonjour,

An easy and healthy recipe for fish teriyaki doesn't need many ingredients, just a few basic ingredient at home can make a tasty and delicious dish. Making homemade teriyaki sauce is easy, just mix the ingredients together, boil and voila, this dish can be serve with rice or noodles or just eat with salad. It's delicious.




TERIYAKI FISH WITH SOBA NOODLES

Ingredients:

300g fish fillet or salmon
1/2 or 1 packet soba noodles
1 bunch green vegetables/ choy sum, cut
1 carrot, sliced
1 cloves garlic, chopped
1 tablespoon light soya sauce
Salt and pepper to taste
Oil for frying

For the teriyaki sauce:
2 cloves garlic, chopped
2cm ginger, chopped
2 tablespoon mirin or rice vinegar
5 tablespoon light soy sauce/kikkoman
2 tablespoon brown sugar
1 tablespoon water

METHOD:

- Marinate fish fillet with soya sauce, salt and pepper for at least 1 hour.
- Mix the teriyaki sauce together, set aside.
- Boil soba noodles according to package direction.
- Heat a little oil in wok and fry garlic until fragrant.
- Add carrot and choy sum and stir fry for a few minutes.
- Add soba noodles, season with salt and pepper and stir to mix well and heat through. Serve on the plate.
- Heat oil in a frying pan and pan-fry fish until cook or crisp. Set aside.
- In the same frying pan, bring to boil the teriyaki sauce and simmer until the sauce is slightly thick.
- Add the fish fillet and coat in the sauce. Remove from heat.
- Serve and laid the fish teriyaki on top of the soba noodles and garnish with coriander.

Chocolate Sour Cream Bundt Cake

Salut,

I liked chocolate cake but I don't eat them too much. I just enjoy them every once in a while. In fact, I love making chocolate cake and give it as a treats for my friends. I made these chocolate sour cream bundt cake few days ago for our lunch gathering. This cake turned out just as moist, rich and delicious. Even taste better with chocolate ganache on top.



CHOCOLATE SOUR CREAM BUNDT CAKE

Ingredients:

1 cup salted butter
1/3 cup cocoa powder
1 cup water
2 cup all purpose flour
1 1/3 cups sugar
1 teaspoon baking soda
2 eggs
1/2 cup sour cream (or greek yogurt) I used cream fraiche legere in French
1 teaspoon vanilla extract

For the chocolate ganache:
4 ounces dark chocolate, chopped
1/2 cup heavy cream
1 1/2 tablespoon sugar

METHOD:

- Preheat oven 180° and butter and flour bundt pan. Set aside.
- In a small sauce pan, combine butter, cocoa and water over medium heat until melted and combined. Set aside.
- In a large bowl, whisk flour, sugar and baking soda.
- Add half melted butter and whisk until completely blended. Add remaining butter and whisk until all combined.
- Add the eggs one at a time and follow by sour cream and vanilla extract.
- Pour the batter into pepared bundt pan and bake for 40-45 minutes or until skewer comes out clean.
- While the cake is cooling, prepare chocolate ganache by melt chocolate, cream and sugar over meduim heat or double boiler until smooth.
- Pour over the cooled cake.

Stir Fried Satay Prawns with Vegetables

Coucou,

A pre-made satay sauce or powder or called sate en poudre in France mostly can be found at any Asian Grocery Store here. First time I heard and tried this ready made sate powder was from mon mari because he like to cooked prawns or vegetables with sate powder. I really have no idea if this sate powder sell in my hometown, or maybe I'm not aware of it.

At first, I was so impressed with how easy and delicious this dish turned out to be. In fact, quite many people I know here like the flavor and texture of sate.

Here's the stir fried prawns with vegetables recipe using sate powder.



STIR FRIED SATAY PRAWNS WITH VEGETABLES

Ingredients:

300g prawns
20g black fungus, soaked
1 yellow bell pepper, diced
1 carrot, diced
1 onion, sliced
2 cloves garlic, chopped
2 tablespoon sate powder
salt to taste
Oil

METHOD:

- Heat the frying pan with little oil and stir in chopped garlic until aromatic.
- Add sate powder and prawns and stirring for a minute.
- Add black fungus, bell pepper, carrot and onion and stirring constantly.
- Cover the pan with a lid and let cook for about 3-5 minute or until slightly softened.
- Add salt to taste. Remove from heat.

Chocolate Chip and Nut Cookies

I just finished baking these cookies and cake because tomorrow we will have an earlier holiday gathering for a small lunch at mon mari office just before Christmas holiday. Though this cookies is not a traditional christmas cookies, but it's just a simple chocolate chip and nut cookies.

This homemade cookies is perfect for holiday parties or just for a treat to family and friends. It simple and delightful!



CHOCOLATE CHIP AND NUT COOKIES

Ingredients:

A
1/4 cup sugar
1/2 cup brown sugar
75g salted butter
1/2 cup vegetable oil
1 egg
1 tablespoon fresh milk
1/2 tablespoon white vinegar
1 teaspoon vanila extract

B
2 cups flour
1 tablespoon cocoa powder
1 tablespoon corn flour
1/2 teaspoon baking soda
1/2 cup chopped nuts (walnuts or almond)
1 cup chocolate chips

METHOD:

- Preheat oven 170° and prepare baking pan.
- Sift together flour, cocoa, corn flour and baking soda.
- In a large bowl, cream together ingredients A until light and fluffy.
- Add sifted flour little by little and stir until well mixed.
- Add chocolate chips and nuts and stir to combine.
- Drop a tablespoon sized ball onto baking pan. Keep them about 1 to 2 inch apart.
- Baked for 12-15 minutes.

Fried Glass Noodles

I used to eat fried glass noodles when I was abroad quite often few years ago. These noodles can be stir fried, can be used in soup or can be used to make a salad as well. I liked stir fried noodles with lots of vegetables and spicy taste of cause. For me personally, it taste great when it's spicy.

This fried glass noodles is a simple dish that I prepare for lunch or for dinner sometimes. Usually I don't add crab sticks but since I have some left in the fridge, so I add crab sticks.



FRIED GLASS NOODLES

Ingredients:

1 small pack of glass noodles
1 red onion, sliced
1 carrot, thinly sliced
5 crab sticks, halved
1 egg
2 cloves garlic, chopped
2 red chillies chopped, (optional)
2 tablespoon light soy sauce
1 tablespoon ketchup or chilli sauce
Salt and pepper to taste
Oil for frying

METHOD:

- Soak the glass noodles in warm water for 20 minute or until soft.
- Heat little oil in frying pan and fry garlic and chilli until fragrants.
- Add in carrot and onion and cook for 1-2 minutes.
- Crack in the egg and scramble the egg until half cook.
- Add in the glass noodles and the sauce, soy sauce and ketchup.
- Stir and mix well on a low heat for a few minutes.
- Add in crab sticks and season with salt and pepper.
- Dish out and serve with squeez of lemon.

Thai Green Curry Prawns

Coucou,

There is a different between Indian and Thai curry paste. Every Thai curry taste also different and unique because they used more fresh herb and of cause more chillies. Thai tends to use galangal, lemongrass, basil and other fresh ingredients that are not used in India. Somehow, these two curries Thai and Indian are always my choices because they're all delicious!

I made Thai green curry prawns last weeks and I'm just happy that mon mari really enjoyed his meal more than me. He love the flavor and texture of Thai green curry.



THAI GREEN CURRY PRAWNS

Ingredients:

300g prawns
1 eggplant, cut into chunk
1 1/2 cups coconut milk
2 tablespoon Thai green curry powder or paste
1 tablespoon brown sugar
1 tablespoon fish sauce
Salt to taste

METHOD:

- In the medium saucepan, boil half cup of coconut milk and add the green curry paste. Cook for 1-2 minutes.
- Add prawns and the rest of coconut milk and keep in high heat for a minute.
- Add eggplants, cook and stirring occasionally.
- Seasoning with brown sugar, fish sauce and salt.
- Thai green curry prawns are ready to serve.

Stir Fried Squid with Vegetables

We eat a lot of seafood and vegetables almost every day at home. Eventhough there are only a few kinds of seafoods that I like, yet I can eat veggies every day. I've been cooking squid quite often lately but there is nowhere near as much as I cooked fish or prawns.

Let's have a look for a simple squid recipe below.



STIR FRIED SQUID WITH VEGETABLES

Ingredients:

300g squid, clean and cut into bite sized
1 cup french green beans, cut in half
1 carrot, julienne
1 onion, sliced
2 cloves garlic, chopped
2cm ginger, chopped
1 tablespoon ketchup
1 tablespoon sweet chilli sauce
1 tablespoon light soy sauce
1 tablespoon fish sauce
Salt and pepper to taste

METHOD:

- Heat frying pan with little oil and fry garlic and ginger until fragrants.
- Add green beans, carrots and onion and cook for a few minutes. Add little water if desired.
- Add squid, ketchup, chilli sauce, soy sauce and fish sauce and cook for another 5-8 minutes or until squid cooked through.
- Season with salt and pepper.
- Squid is done and ready to serve with rice.

Scones

How's everyone's weekend going? I suppose many people out there has been busy getting ready for Christmas and find a good present for their family and friends. After our Aidilfitri festival last August in my hometown, now we are preparing for Christmas, is just around the corner.

Long time ago, I used to eat scone with cream, butter and jam for breakfast. These scone are pretty easy to make. I made these last week into mini scone for a opening exhibition at mon mari office. Scones are the easiest English teatime treat. People seem to like the taste and to be honest, I do too.



SCONES

Ingredients:

225g flour
55g salted butter
25g sugar
150ml milk
1 teaspoon baking powder

METHOD:

- Heat oven to 220° and lightly grease a baking sheet.
- Mix together flour, sugar and baking powder. Using fingertips, rub butter into flour mixture resembles breadcrumbs.
- Add milk and mix with a wooden spoon or knife until mixture forms a soft dough.
- Turn onto a lightly floured surface and knead gently until smooth but don't knead too much.
- Pat dough into 2cm thick round. Use round or any shape cutter to stamp out and place on a baking sheet.
- Bake for 12-15 minutes or until golden and well risen.
- Served with jam, butter or cream.

Indian Style Fish Curry

We always love eating at home and cooking our own meal. It just happen that this past few weeks I've cooked curry dish quite often and in fact, we really like the taste of curry or at least for this moment. I still miss my mom and sister cook homemade food in my hometown, their curry fish was the best ever.

Indians typically eat their curry with a type of breads but of cause its good to eat with rice as well. Even mon mari eat curry with French baguettes and he likes it! This time our fish curry serve with rice, pickles on top and Indian crackers, and voila they came out delish!



INDIAN STYLE FISH CURRY

Ingredients:

300g fish fillets
1 tomato, cut into 6
1 shallot, chopped
2 cloves garlic, chopped
2cm ginger, chopped
2 tablespoon curry powder, add little water to make paste
1/2 teaspoon cumin
1/2 stick cinnamon
1 cup coconut milk
Salt to taste

METHOD:

- In a medium saucepan, heat a little oil and fry shallot, garlic and ginger until aromatic.
- Add curry powder, cumin and cinnamon. Stir to combine and cook for 2-3 minutes.
- Pour in the coconut milk and bring to boil. Add more water if desired.
- Add in fish fillets, tomatoes and season with salt.
- Cook the fish for at least 5 minutes or until the fish is cooked through.
