Sardine Bread Roll

Bonsoir a tous,

Sardine bread roll is another asian simple dish that I used to made quite often because this recipe is easy and simple. Used a white bread and roll with sardine and coated with bread crumbs, a very simple snack and simply delicious.

A friend asking me what is the recipe because this stuff it seems new for them. So here is a simple way to make sardine bread roll.



SARDINE BREAD ROLL

Ingredients:

1 can of sardine in tomato sauce
1 onion, diced
2 tablespoon tomato ketchup
6-8 slices of white bread
1 egg, lightly beaten
Bread crumbs
Salt and pepper to taste
Oil for frying

METHOD:

- Fry diced onion in a pan with a little oil until soften and aromatic.
- Add in sardine, mash and makesure taken out the bones.
- Add tomato ketchup and taste with salt and pepper and let it simmer for a minute. Set aside.
- Take a bread slices and flatten with rolling pin.
- Place a spoon of sardine on the bread and roll.
- Dip the rolls into the beaten egg.
- Cover the rolls completely with bread crumbs.
- Heat the pan with oil and fry the rolls with medium heat until golden brown.

Prawns with Onions

Salut,

Comment ça va, tout le monde? Fall is here and the weather begins to cool. The leaves start to change color and at the same time the leaves also start to fall of the trees. I like fall but I prefer spring when I can enjoy sunny days with lots of colourful flowers and bright blue skies.

Alors, now I want to share a simple and quick evening meal. I haven't cook prawn at home for a while since we came back from holiday. I just happy that I prepared this prawns tonight.



PRAWNS WITH ONIONS

Ingredients:

200 gm prawn, shelled or without shelled
1 onion, sliced
2 cloves garlic, chopped
2cm ginger, chopped
1 green or red chillies
1 tomato, chopped
1/2 teaspoon cumin powder
Salt and pepper to taste
Oil for frying

METHOD:

- Heat a little oil in a pan and saute onion for a minute or two.
- Add garlic, ginger and chillies and stir fry for another minute.
- Add tomatoes and cumin powder and continue to stir.
- Add in prawns and cook until the prawns turn pink.
- Season with salt and pepper.
- Remove from heat and serve hot.

Ikan Asam Pedas (Sour and Spicy Fish)

Hello there!

I cooked this asam pedas for dinner tonight. Asam pedas ikan or sour and spicy fish is one of popular dish in west Malaysia. Fish or seafood cooked with the light or thick gravy which means sour and spicy. The gravy is so delicious and tasty and sometime I just eat it together with plain rice.

There are actually many different variation of asam pedas but for this recipe, I have my own version of asam pedas because I can't find all of the ingredients here. However, with the basic ingredients I have, the tasted quite good and almost like the one I had in Malaysia.

Alors, here's a simple recipe of sour and spicy fish:




IKAN ASAM PEDAS (SOUR AND SPICY FISH)

Ingredients:

2 mackerel or any fish fillets
1 tomato, cut into wedges
1 tablespoon tamarind paste, make a juice extract 1 cup
1 cup water
Cooking oil
Sugar and salt to taste

For the paste:
* Pound or blend to a fine paste
1 shallot
4 cloves garlic
2 cm ginger
1/2 teaspoon shrimp paste (belacan)
4-6 dried chillies, soaked in hot water
1/2 teaspoon turmeric powder or fresh turmeric

METHOD:

- Heat up some oil and fry the fine paste until fragrant.
- Add water and tamarind juice and bring to boil.
- Once the water begin to boil, add fish and simmer for 5-8 minutes.
- Add the tomatoes, taste with sugar, salt and stir on low heat for 2-3 minutes.
- Dish out and serve hot.

Lemon Cream Fruit Tarts

Few days ago I was thinking about fruit tart. So, last night I made these lemon tartlets specially for mon mari because he love lemon tart and he really enjoyed this one. Even though the taste not exactly the same as patisserie but it tasted just as good and won't be disappointed! I brought some for my friends in class and everyone liked it.

I have a basic recipe for tart dough and it was fabulous and deliciously sweet. This recipe make around 24-26 mini tarts. I had some extra lemon curd and I will freeze it so I always have some on hand. I hope everyone out there will enjoy this beautiful little summer dessert.



LEMON CREAM FRUIT TARTS

Ingredients:

1 cup butter, softened
3 tablespoon brown sugar
3 tablespoon white sugar
1 1/2 cups flour

METHOD:

- Using hand or food processor, mix together butter, sugar and flour in a bowl.
- Process and work the dough until it holds together.
- Chilled slightly in freeze for 5- 10 minutes.
- Meanwhile, preheat oven to 170°.
- Take a small chunk and place it into each tartlet pan and press the dough all the way up to the edge.
- Bake for 10-15 minutes or until light brown.
- Remove from oven and use a round measuring spoon to gently press down dough to form a shallow indent. Cool completely.

Homemade Lemon Curd:

2 eggs
1 cup sugar
1/2 cup butter
1/3 cup lemon juice
1 tablespoon lemon zest

- Using a double boiler, beat eggs and sugar.
- Stir in butter, lemon juice and lemon zest. Stirring constantly.
- Cook over simmering water for 15-20 minutes or until mixture slightly thickens and coats spoon.

Lemon Curd Cream:

1 cup heavy cream (creme epaisse)
4-5 tablespoon lemon curd

- Whip heavy cream and fold in lemon curd.
- Spoon lemon cream in each tart and top with any fruit as you desired. Mine used mango fruits.

Carrot Cupcakes

This month, the weather was good and pleasant, sunny, warm and a little windy but nothing too objectionable. Perhaps it can sometimes be a little unpredictable. I just hope everything will continue to fall into place as it should.

Alors, maintenant let's talk about cupcakes. I've made this carrot cake several time and I've tried quite a few different recipes. But, this recipes was great, it turns out moist, tender and they are absolutely amazing. At the same time, it's quick and it's easy to make.




CARROT CUPCAKES

Ingredients:

2 eggs
1 cup brown sugar
1/2 cup vegetable oil
1 teaspoon vanila extract
1 cup all purpose flour
1/2 teaspoon cinnamon powder
1/2 teaspoon baking powder
1/2 teaspoon bicarbonate of soda
1 cup finely grated carrot

METHOD:

- Preheat oven to 180° and prapare cupcake pans.
- Beat together eggs, sugar, oil and vanila until combined.
- Add in flour, baking powder, bicarbonate of soda and cinnamon.
- Add carrot and mix everything until just combined.
- Pour in the muffin pans and bake for 20-25 minutes or until skewer inserted comes out clean.
- Top up with cream cheese frosting and the cupcakes tastes even better.

Boiled Fruit Cake

I loves fruitcake, although I'm not a big fan of the store bought fruit cake. Made this homemade fruit cake a couple of days ago for the event at mon mari's office. This is my second attempt, so I am glad to hear that people liked it.

They ask me for the recipes, so it's my pleasure to be able to share this fruitcake recipe here. Fortunately the recipe's not complicated, it was a simple and easy for a boiled fruitcake. Let's make a fruitcake now.



BOILED FRUIT CAKE

Ingredients:

500g mix dried fruit
250g butter, cut cubed
1 1/2 cup water
1 teaspoon bicarbonate of soda
1 tin condensed milk (397g)
1 tablespoon vinegar (any kind of vinegar)
2 tablespoon strong tea
1 teaspoon vanila extract
2 cups flour
1 teaspoon baking powder
1 teaspoon cinnamon powder
Pinch of salt

METHOD:

- Placed the mixed fruit, chopped butter, water and bicarbonate of soda into a large saucepan.
- Bring to boiled and keep stirring. When it has begun to boiled, turn off the heat and let it cool.
- Preheat oven 150° and prapare the baking tin.
- Add condensed milk, vinegar, tea and vanila extract into the cold fruit mixture. Stirring well.
- Then add the flour, baking powder, cinnamon and salt and stir until all combined.
- Pour the mixture into baking tin and bake for 1 hour -1 hour 20 minutes or until skewer comes out clean.
- Pour the extra tea, about 3 tablespoon over the top of cake while the cake is still warm. Leave them cool before removing.

Oreo Cheese Cupcake

One day last week, I made this cupcake for a friends and they loved it. This simple oreo cheese cupcake have been giving to our friends during our visit to England last week. I've got a plan to make other things before, well anyway I end up making cupcake.

In fact I liked this oreo cheese cupcake because it was a simple recipe and easy to do. So, let's check the recipe below:




OREO CHEESE CUPCAKE

Ingredients:

1-2 package Oreo cookies, 21 left whole, 6 coarsely chopped
500g cream cheese
1/2 cup sugar
1/2 teaspoon vanila extract
2 eggs
1/2 cup plain yogurt

METHOD:

- Preheat oven to 170° and prepared muffin tin with paper liners.
- Place a whole oreo cookies in the bottom of each lined cup.
- In the large bowl, beat the cream cheese until smooth. Add the sugar and beat until all combined.
- Add the vanila extract and eggs one at a time and beating until incorporated.
- Add the yogurt in but do not over mix.
- Stir in the chopped oreo cookies.
- Divide the batter evenly between the prepared lined cups.
- Baked for 15-20 minutes.
- Transfer to wire racks to cool completely and after refrigerate for 8 hours or overnight.
