Tomato And Thyme Fish

Salut,

There are many ways to cook fish and this tomato and thyme fish recipe really easy to prepare and very tasty. The fish goes very well with potatoes. These kind of recipe are a great dish to have for dinner.

For those who like chilli, add little bit of chilli in this recipe would be good too. Quick, simple and delicious.



TOMATO AND THYME FISH

Ingredients:

2-3 fish fillet
1 onion, chopped
2 cloves garlic, chopped
1 can chopped tomatoes or fresh tomato
A few springs thyme
Salt, pepper and sugar to taste
Olive oil

METHOD:

- Heat olive oil in a frying pan and fry onion and garlic until lightly brown.
- Add tomatoes, thyme, season with salt, pepper and sugar, bring to boil and simmer for few minutes.
- Add the fish fillet into the sauce, cover and cook for 5-10 minutes or until the fish cook through.
- Serve with baked or steamed potatoes.

Stir-Fry Okra

Bonjour,

I'm not really a big fan of okra/ ladyfingers but when they are mixed with fish curry then there is I liked okra. To cook okra can be as simple as other vegetables, it can be blanch, steam or give it a quick stir-fry. and just need to cook them in a very short time.

Okra also go well as a side dish with rice and sometimes it's the simple things that are the best.



STIR-FRY OKRA

Ingredients:

10-15 okras, sliced thinly
2 cloved garlic, chopped
2 tablespoon dried shrimp
1 teaspoon chilli paste
Salt and pepper to taste

METHOD:

- Soak dried prawn in warm water for a few minutes and finely chopped them, set aside
- Heat oil in frying pan and fry garlic and dried shrimp until fragrant.
- Add chilli paste and follow by okra.
- Add little water and fry them for a few minutes.
- Season with salt and pepper and let it cook for another minute.

Curry Mee

Coucou,

When it comes to the noodle soups, almost every state in Malaysia have their own specialty noodles soup. Curry mee or curry laksa also come with different types of noodles depends on the regions and individual preferences. Curry mee is one of the delicious curry noodle soup with a coconut milk curry gravy and served with variety of toppings.

I've made this curry mee few days ago and we liked it so much. I started with a simple recipe for the curry soup and it turned out pretty good and so worth it.



CURRY NOODLE SOUP/ CURRY MEE

Ingredients:

1 packet yellow noodles (for 2-3 person)
200g prawns (chicken or other seafood)
A bunch of pak choy
A handful of bean sprouts
2 hard boiled egg
2 tablespoon curry powder, mix with little water
2 shallot, chopped
2 cloves garlic, chopped
2cm ginger, chopped
1 small cinnamon stick
1 star anise
2 cardamom
2 cloves
2 spring curry leaves
2 cup coconut milk
1-2 cup water
Salt and sugar to taste

METHOD:

- Blanch the noodles in the big pot of boiling water for 1-2 minutes. Drain, rinse and set aside.
- Blanch the bean sprouts and pak choy, set aside.
- Heat little oil in a large pot and fry garlic, shallot and ginger until fragrant.
- Add in cinnamon, anise, cardamom and cloves, stir for a minute.
- Add curry paste and curry leaves, continue to stir for 2-3 minutes. Add little bit water if desire.
- Add the prawns and water and bring it to a boil for a few minutes.
- Stir in coconut milk and taste with salt and sugar and let it boil again for another minutes.
- To serve, add some noodles to a bowl, top with the curry soup on top and garnish with vegetables and hard boiled egg.
- Squeezed with lime and chilli if desired.

Stir Fried Squid in Thai Red Curry

Bonjour,

I'm so glad I found Thai red curry paste from grocery store recently even though the red curry paste not hot enough for me like the real taste in Thailand. The red curry paste imported from Thailand here really suitable for the European taste.

It's not too much to say that our friends like the stir fried squid with Thai red curry tastes. It looks spicy but it's not and is still very flavorful. The good thing is, they are easy to prepare.



STIR FRIED SQUID IN THAI RED CURRY

Ingredients:

300g squid, cleaned and sliced
6 or more green beans
1/2 tablespoon Thai red curry paste
2 tablespoon oyster sauce
1 tablespoon fish sauce
Sugar to taste
Oil

METHOD:

- Heat little oil in a wok or pan and add red curry, stir until aromatic.
- Add squid and continue stirring for a minute.
- Add oyster sauce, fish sauce, sugar and little bit water.
- Add green beans and stir fry for 2-3 minutes or until cooked through.

Chocolate Mayo Cake

I've never thought of baking a cake with mayonnaise before because it sound like a weird addition or idea to make a cake with mayonnaise. That is what I think at the beginning until I tried this one. This is my first mayonnaise cake I've tried and surprisingly, it turned out to be a lovely cake, moist and tasty. Nobody knows that mayo is involved because there is no mayonnaise taste at all.

I know it's hard to believe right?  Mayonnaise as a replacement for oil and egg in a some of chocolate cake recipes, mayonnaise does not sound bad at all. So why not!



CHOCOLATE MAYO CAKE

Ingredients:

2 cups flour
1 cup sugar
1 cup mayonnaise
1/2 cup cocoa powder
1 1/2 cups water
2 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon vanilla extract

METHOD:

- Preheat oven 180° and prepare baking pan.
- In a bowl, mix sugar and mayonnaise until smooth.
- In another bowl, combined flour, cocoa, baking powder and baking soda.
- Add a half of flour mixture into the mayonnaise mixture. Mix well.
- Add half of the water, than flour and water again until everything just combined.
- Lastly, add the vanilla extract.
- Pour the batter into prepared baking pan and baked for 40-50 minutes or until skewer comes out clean.
- Top the cake with chocolate or vanilla frosting as desired.

Poisson En Papillote

Baking or grilling fish are always healthier because sometimes the cooking time is shorter and less oil is used. However, its depends on the type of fish as well. Some fish is better and suited for deep frying.

Cooking en papillote (in parchment) is the best ways to cook fish a la French style. Quick and easy and it's delicious too. I've had a few recipes fish en papillote to update today and they are definitely easy to prepare. I know that anyone can make this easy baked fish.


FISH AND VEGETABLES EN PAPILLOTE


Ingredients:

2 fish fillet
1 zucchini, julienned
1 carrot, julienned
3cm ginger, sliced
2 tablespoon lemon juice
1 tablespoon olive oil
Salt and pepper

METHOD:

- Preheat oven 200°.
- Arrange the vegetables in the center of parchment paper and place each fish fillet on top.
- Season with salt and pepper.
- Top each fillet with slices of ginger, olive oil and lemon juice.
- Fold the parchment paper and make sure the packets are sealed well.
- Bake for 12-20 minutes, depending on the thickness of the fish.


FISH WITH THAI SAUCE EN PAPILLOTE


Ingredients:

1-2 fish fillet
2 cloves garlic, sliced
2cm ginger, sliced
2-3 small chilli, optional
2 tablespoon Thai sweet chilli sauce
2 tablespoon light soy sauce
1 teaspoon fish sauce
1 tablespoon lemon juice
Salt and sugar to taste

METHOD:

- Preheat oven 200°.
- Combine all the ingredients except fish in a bowl, mix well.
- Place fish fillet in the center of aluminum foil.
- Pour the sauce over the fish.
- Seal the parcel and place on a baking tray and bake for 12-20 minutes.


FISH WITH TOM YAM SAUCE EN PAPILLOTE


Ingredients:

1-2 mackerel or any fish fillet
2 cloves garlic, sliced
2cm ginger, sliced
2-3 small chilli, optional
1 tablespoon tom yam paste
2 tablespoon light soy sauce
2 tablespoon fish sauce
1 tablespoon lemon juice
1 tablespoon brown sugar

METHOD:

- Combine all ingredients except fish in a bowl and mix well.
- Placed fish in the center of the foil.
- Pour the sauce over the fish.
- Seal the parcel, place on a baking tray and bake for 15-20 minutes.
