Every year during Eid al-Fitr celebration especially in Borneo, there's one cookies called kuih makmur or kuih mor where almost every household has made or bought some ready-made because kuih makmur are a must have for Eid. As far as I remembered, these cookies have been a tradition in our family since I was a little girl, every bite of these cookies brought back my childhood memories.
Eid is just a few weeks away now, let's bake makmur cookies!
MAKMUR COOKIES
Ingredients;
250g flour
150g ghee/butter, melted
1 tablespoon castor sugar
100g roasted peanuts, coarsely ground peanuts
1 tablespoon melted butter
Powder sugar for coating
METHOD;
- Spread the flour on a baking pan and bake for 8-10 minutes or until lightly toasted, stirring once halfway through. Let cool completely.
- In a mixing bowl, combine flour, melted butter and sugar, knead until it become a soft dough.
- In a small bowl, combine peanut and 1 tablespoon melted butter, mix well. Set aside
- Pinch some dough, roll into small balls, flatten the dough and fill with peanut fillings. Seal the edges and make into a round shape.
- Bake in preheated oven at 160° for 12-15 minutes.
- Remove and cool a little before roll in powdered sugar.
