Riz au lait au caramel or caramel rice pudding, one delicious dessert that everyone knows here and a kind of dessert that brings back to a childhood memories for many. A simple basic rice pudding so much easy to make, it just take a little longer to cook.
This rice pudding is so good on its own but even better when it serve with salted caramel. Someone loved this caramel rice pudding and asked for more, what a pleasure!
CARAMEL RICE PUDDING
Ingredients;
100g round rice
500ml semi skimmed milk
40g sugar
1 vanilla pod
Salted caramel;
80g sugar
100ml heavy cream
40g salted butter
METHOD;
- Split the vanilla pod, scrape out the seed and place all ingredients in a medium saucepan.
- Bring to a boil over medium heat and simmer for 20-30 minutes, stirring occasionally.
- Reduce the heat to low, stirring frequently and simmer for another few minutes until the rice is tender and creamy.
- Meanwhile, prepare salted caramel by heat sugar in a small saucepan until sugar fully melted and turn into brown colour.
- Carefully pour in heavy cream, keep stirring and add butter, simmer for a couple of minutes until smooth.
- Serve rice pudding with salted caramel.
