Teriyaki Fish with Soba Noodles

Bonjour,

An easy and healthy recipe for fish teriyaki doesn't need many ingredients, just a few basic ingredient at home can make a tasty and delicious dish. Making homemade teriyaki sauce is easy, just mix the ingredients together, boil and voila, this dish can be serve with rice or noodles or just eat with salad. It's delicious.




TERIYAKI FISH WITH SOBA NOODLES

Ingredients:

300g fish fillet or salmon
1/2 or 1 packet soba noodles
1 bunch green vegetables/ choy sum, cut
1 carrot, sliced
1 cloves garlic, chopped
1 tablespoon light soya sauce
Salt and pepper to taste
Oil for frying

For the teriyaki sauce:
2 cloves garlic, chopped
2cm ginger, chopped
2 tablespoon mirin or rice vinegar
5 tablespoon light soy sauce/kikkoman
2 tablespoon brown sugar
1 tablespoon water

METHOD:

- Marinate fish fillet with soya sauce, salt and pepper for at least 1 hour.
- Mix the teriyaki sauce together, set aside.
- Boil soba noodles according to package direction.
- Heat a little oil in wok and fry garlic until fragrant.
- Add carrot and choy sum and stir fry for a few minutes.
- Add soba noodles, season with salt and pepper and stir to mix well and heat through. Serve on the plate.
- Heat oil in a frying pan and pan-fry fish until cook or crisp. Set aside.
- In the same frying pan, bring to boil the teriyaki sauce and simmer until the sauce is slightly thick.
- Add the fish fillet and coat in the sauce. Remove from heat.
- Serve and laid the fish teriyaki on top of the soba noodles and garnish with coriander.

Chocolate Sour Cream Bundt Cake

Salut,

I liked chocolate cake but I don't eat them too much. I just enjoy them every once in a while. In fact, I love making chocolate cake and give it as a treats for my friends. I made these chocolate sour cream bundt cake few days ago for our lunch gathering. This cake turned out just as moist, rich and delicious. Even taste better with chocolate ganache on top.



CHOCOLATE SOUR CREAM BUNDT CAKE

Ingredients:

1 cup salted butter
1/3 cup cocoa powder
1 cup water
2 cup all purpose flour
1 1/3 cups sugar
1 teaspoon baking soda
2 eggs
1/2 cup sour cream (or greek yogurt) I used cream fraiche legere in French
1 teaspoon vanilla extract

For the chocolate ganache:
4 ounces dark chocolate, chopped
1/2 cup heavy cream
1 1/2 tablespoon sugar

METHOD:

- Preheat oven 180° and butter and flour bundt pan. Set aside.
- In a small sauce pan, combine butter, cocoa and water over medium heat until melted and combined. Set aside.
- In a large bowl, whisk flour, sugar and baking soda.
- Add half melted butter and whisk until completely blended. Add remaining butter and whisk until all combined.
- Add the eggs one at a time and follow by sour cream and vanilla extract.
- Pour the batter into pepared bundt pan and bake for 40-45 minutes or until skewer comes out clean.
- While the cake is cooling, prepare chocolate ganache by melt chocolate, cream and sugar over meduim heat or double boiler until smooth.
- Pour over the cooled cake.

Stir Fried Satay Prawns with Vegetables

Coucou,

A pre-made satay sauce or powder or called sate en poudre in France mostly can be found at any Asian Grocery Store here. First time I heard and tried this ready made sate powder was from mon mari because he like to cooked prawns or vegetables with sate powder. I really have no idea if this sate powder sell in my hometown, or maybe I'm not aware of it.

At first, I was so impressed with how easy and delicious this dish turned out to be. In fact, quite many people I know here like the flavor and texture of sate.

Here's the stir fried prawns with vegetables recipe using sate powder.



STIR FRIED SATAY PRAWNS WITH VEGETABLES

Ingredients:

300g prawns
20g black fungus, soaked
1 yellow bell pepper, diced
1 carrot, diced
1 onion, sliced
2 cloves garlic, chopped
2 tablespoon sate powder
salt to taste
Oil

METHOD:

- Heat the frying pan with little oil and stir in chopped garlic until aromatic.
- Add sate powder and prawns and stirring for a minute.
- Add black fungus, bell pepper, carrot and onion and stirring constantly.
- Cover the pan with a lid and let cook for about 3-5 minute or until slightly softened.
- Add salt to taste. Remove from heat.

Chocolate Chip and Nut Cookies

Salut,

I just finished baking these cookies and cake because tomorrow we will have an earlier holiday gathering for a small lunch at mon mari office just before Christmas holiday. Though this cookies is not a traditional christmas cookies, but it's just a simple chocolate chip and nut cookies.

This homemade cookies is perfect for holiday parties or just for a treat to family and friends. It simple and delightful!



CHOCOLATE CHIP AND NUT COOKIES

Ingredients:

A
1/4 cup sugar
1/2 cup brown sugar
75g salted butter
1/2 cup vegetable oil
1 egg
1 tablespoon fresh milk
1/2 tablespoon white vinegar
1 teaspoon vanila extract

B
2 cups flour
1 tablespoon cocoa powder
1 tablespoon corn flour
1/2 teaspoon baking soda
1/2 cup chopped nuts (walnuts or almond)
1 cup chocolate chips

METHOD:

- Preheat oven 170° and prepare baking pan.
- Sift together flour, cocoa, corn flour and baking soda.
- In a large bowl, cream together ingredients A until light and fluffy.
- Add sifted flour little by little and stir until well mixed.
- Add chocolate chips and nuts and stir to combine.
- Drop a tablespoon sized ball onto baking pan. Keep them about 1 to 2 inch apart.
- Baked for 12-15 minutes.

Fried Glass Noodles

I used to eat fried glass noodles when I was abroad quite often few years ago. These noodles can be stir fried, can be used in soup or can be used to make a salad as well. I liked stir fried noodles with lots of vegetables and spicy taste of cause. For me personally, it taste great when it's spicy.

This fried glass noodles is a simple dish that I prepare for lunch or for dinner sometimes. Usually I don't add crab sticks but since I have some left in the fridge, so I add crab sticks.



FRIED GLASS NOODLES

Ingredients:

1 small pack of glass noodles
1 red onion, sliced
1 carrot, thinly sliced
5 crab sticks, halved
1 egg
2 cloves garlic, chopped
2 red chillies chopped, (optional)
2 tablespoon light soy sauce
1 tablespoon ketchup or chilli sauce
Salt and pepper to taste
Oil for frying

METHOD:

- Soak the glass noodles in warm water for 20 minute or until soft.
- Heat little oil in frying pan and fry garlic and chilli until fragrants.
- Add in carrot and onion and cook for 1-2 minutes.
- Crack in the egg and scramble the egg until half cook.
- Add in the glass noodles and the sauce, soy sauce and ketchup.
- Stir and mix well on a low heat for a few minutes.
- Add in crab sticks and season with salt and pepper.
- Dish out and serve with squeez of lemon.

Thai Green Curry Prawns

Coucou,

There is a different between Indian and Thai curry paste. Every Thai curry taste also different and unique because they used more fresh herb and of cause more chillies. Thai tends to use galangal, lemongrass, basil and other fresh ingredients that are not used in India. Somehow, these two curries Thai and Indian are always my choices because they're all delicious!

I made Thai green curry prawns last weeks and I'm just happy that mon mari really enjoyed his meal more than me. He love the flavor and texture of Thai green curry.



THAI GREEN CURRY PRAWNS

Ingredients:

300g prawns
1 eggplant, cut into chunk
1 1/2 cups coconut milk
2 tablespoon Thai green curry powder or paste
1 tablespoon brown sugar
1 tablespoon fish sauce
Salt to taste

METHOD:

- In the medium saucepan, boil half cup of coconut milk and add the green curry paste. Cook for 1-2 minutes.
- Add prawns and the rest of coconut milk and keep in high heat for a minute.
- Add eggplants, cook and stirring occasionally.
- Seasoning with brown sugar, fish sauce and salt.
- Thai green curry prawns are ready to serve.

Stir Fried Squid with Vegetables

We eat a lot of seafood and vegetables almost every day at home. Eventhough there are only a few kinds of seafoods that I like, yet I can eat veggies every day. I've been cooking squid quite often lately but there is nowhere near as much as I cooked fish or prawns.

Let's have a look for a simple squid recipe below.



STIR FRIED SQUID WITH VEGETABLES

Ingredients:

300g squid, clean and cut into bite sized
1 cup french green beans, cut in half
1 carrot, julienne
1 onion, sliced
2 cloves garlic, chopped
2cm ginger, chopped
1 tablespoon ketchup
1 tablespoon sweet chilli sauce
1 tablespoon light soy sauce
1 tablespoon fish sauce
Salt and pepper to taste

METHOD:

- Heat frying pan with little oil and fry garlic and ginger until fragrants.
- Add green beans, carrots and onion and cook for a few minutes. Add little water if desired.
- Add squid, ketchup, chilli sauce, soy sauce and fish sauce and cook for another 5-8 minutes or until squid cooked through.
- Season with salt and pepper.
- Squid is done and ready to serve with rice.

Scones

Bonjour,

How's everyone's weekend going? I suppose many people out there has been busy getting ready for Christmas and find a good present for their family and friends. After our Aidilfitri festival last August in my hometown, now we are preparing for Christmas, is just around the corner.

Long time ago, I used to eat scone with cream, butter and jam for breakfast. These scone are pretty easy to make. I made these last week into mini scone for a opening exhibition at mon mari office. Scones are the easiest English teatime treat. People seem to like the taste and to be honest, I do too.



SCONES

Ingredients:

225g flour
55g salted butter
25g sugar
150ml milk
1 teaspoon baking powder

METHOD:

- Heat oven to 220° and lightly grease a baking sheet.
- Mix together flour, sugar and baking powder. Using fingertips, rub butter into flour mixture resembles breadcrumbs.
- Add milk and mix with a wooden spoon or knife until mixture forms a soft dough.
- Turn onto a lightly floured surface and knead gently until smooth but don't knead too much.
- Pat dough into 2cm thick round. Use round or any shape cutter to stamp out and place on a baking sheet.
- Bake for 12-15 minutes or until golden and well risen.
- Served with jam, butter or cream.

Indian Style Fish Curry

We always love eating at home and cooking our own meal. It just happen that this past few weeks I've cooked curry dish quite often and in fact, we really like the taste of curry or at least for this moment. I still miss my mom and sister cook homemade food in my hometown, their curry fish was the best ever.

Indians typically eat their curry with a type of breads but of cause its good to eat with rice as well. Even mon mari eat curry with French baguettes and he likes it! This time our fish curry serve with rice, pickles on top and Indian crackers, and voila they came out delish!



INDIAN STYLE FISH CURRY

Ingredients:

300g fish fillets
1 tomato, cut into 6
1 shallot, chopped
2 cloves garlic, chopped
2cm ginger, chopped
2 tablespoon curry powder, add little water to make paste
1/2 teaspoon cumin
1/2 stick cinnamon
1 cup coconut milk
Salt to taste

METHOD:

- In a medium saucepan, heat a little oil and fry shallot, garlic and ginger until aromatic.
- Add curry powder, cumin and cinnamon. Stir to combine and cook for 2-3 minutes.
- Pour in the coconut milk and bring to boil. Add more water if desired.
- Add in fish fillets, tomatoes and season with salt.
- Cook the fish for at least 5 minutes or until the fish is cooked through.

Potato Side Dishes

Coucou,

We know that potatoes can be cooked in many different ways and all of them are delicious. If rice or noodles in Asia is a main dish and also an essential part of culture but here, people eat more potatoes as a side dish most of the time. I personally eat both rice and potatoes but not too much potato or too often.

I had a few potato recipes here and these potatoes looks great and perfect side dish.


HASSELBACK BAKED POTATOES

Ingredients:

4 potatoes, cleaned and leave skin
4 cloves garlic, thinly sliced
3 tablespoon olive oil
2 tablespoon parmesan cheese
1/2 teaspoon paprika
Salt and pepper

METHOD:

- Preheat oven 220° and prepare baking tray.
- Cut potato into thin slices but do not cut all the way through.
- Combine olive oil, garlic, parmesan, paprika and salt and pepper.
- Insert pinches of the mixture in between the slits of the potatoes. Rub the outsides of potatoes with olive oil.
- Bake for 40-50 minutes and the potato should be a bit crispy.
- Garnish with additional parmesan cheese and salad.



OVEN ROASTED POTATOES

Ingredients:

10 potatoes, cleaned, leave the skin and cut into half
2 tablespoon olive oil
1/2 teaspoon garam masala
1/4 teaspoon chilli powder
Pinch of turmeric powder
Salt and pepper

METHOD:

- Preheat oven 220° and line the baking dish with aluminium foil.
- Season potatoes with all the ingredients and toss until the potatoes are well coated.
- Arrange the potatoes on the baking dish, cut side down.
- Bake for 20-30 minutes or until tender.



FRIED POTATO CURRY

Ingredients:

8-10 potatoes
1 onion, chopped
2cm ginger, chopped
2 cloves garlic, chopped
1/2 teaspoon garam masala
1/2 teaspoon curry powder
1 teaspoon chilli powder
1/2 teaspoon turmeric powder
Salt to taste

METHOD:

- Clean potatoes, leave or peel the skins and cut potatoes into pieces.
- Heat little oil in frying pan and fry onion until fragrant.
- Add potatoes, garlic and ginger and cook for few minutes.
- Add garam masala, curry powder, chilli powder, turmeric powder and season with salt and pepper.
- Cook the potatoes for another few minute or until all side turn golden and cooked.

Salted Caramel Brownies

Bonjour a tous,

I've made caramel cupcakes few weeks ago and I've made it again caramel brownies last few days and it is awesome. Caramel and chocolate makes these brownies taste so good. I used my homemade caramel sauce as a filling.

To make this brownies, it takes a little bit of time to prepare but it's well worth it at the end.


SALTED CARAMEL BROWNIES

Ingredients:

110g butter
150g chocolate chips or dark chocolate
120g sugar
2 eggs
1/2 teaspoon vanilla extract
80g flour
1/4 teaspoon salt
200g caramel sauce

METHOD:

- Preheat oven 180° and prepare baking pan.
- In the medium saucepan, combine butter, sugar and chocolate and melt butter over low heat.
- Remove from heat and stir in vanilla.
- Add the eggs one at a time and stir until incorporated.
- Stir in the flour and salt until just combined.
- Pour half this mixture into prepare baking pan and bake for 15-20 minutes and let it cool for 20 minutes.
- Pour the caramel over the cooked brownies and spread to the corners.
- Pour the rest of brownies mixture over the caramel and spread evenly.
- Bake for 18-20 minutes or until center is set.
- Cool completely before slicing.

Thai Red Curry Prawns

Salut,

Thai food is one of my favorite cuisines because for me Thai food taste so unique and simply the best. Whenever I'm in Thailand, I simply cannot get enough of Thai food dishes. I cooked Thai food at home quite some time even though the taste it wasn't too spicy as real Thai food because mon mari aren't big fans of spicy food.

We liked curries even my family and we always have curries powder at home. This time I got thai red curry and cook it with prawns. It's a perfect dish, easy and recipe is so simple and fantastic flavour.



THAI RED CURRY PRAWNS

Ingredients:

300g prawns
2 cloves garlic, chopped
1 onion, sliced
1 tomato, chopped
2 tablespoon red curry powder, (add little water to make paste)
1 cup coconut milk
1 tablespoon lime or lemon juice
Salt and pepper to taste

METHOD:

- Heat little oil in a saucepan and fry garlic and onion until fragrants.
- Add in curry paste and cook for a minute.
- Add tomatoes and coconut. Bring to boil and simmer for 4-5 minute.
- Add in prawns and cook for another few minutes or until prawns is cook and taste with salt, pepper and lemon juice.
Serve immediately with rice.

Cream of Mushroom Soup

Bonjour a tous,

Cream of mushroom soup is a tasty, easy meal and they are a good choice during cold winter. We had mushroom soup for few days last week and I personally like the textures of fresh mushroom in the soup. I added also carrots and used heavy cream since I like my soup little bit thick.

Homemade cream of mushroom soup at home is always good and forget the canned stuff, this is a lot better and yet easy to make.




CREAM OF MUSHROOM SOUP

Ingredients:

2 cups sliced mushroom
2 carrot, sliced
1 onion, chopped
2 tablespoon flour
2 cups water
1/2 cup light or heavy cream
1 tablespoon butter
1 tablespoon olive oil
Salt and pepper to taste

METHOD:

- In a large saucepan, heat butter and olive oil and fry onion until fragrants.
- Add mushrooms and carrots and fry for a minutes.
- Combine flour and water and stir into mushrooms and bring to boil around 4-5 minutes or until thickend.
- Reduced heat, add cream, salt and pepper and simmer for another few minutes.
- Serve immediately.

Ketchup Prawns

Hello everyone,

I must admit that I have used quite many recipe that asked for ketchup. So, tomato ketchup is one of the things that must have in my kitchen at all time. Whenever I make pasta, I love using ketchup and fresh tomato for the sauce.

Ketchup prawns, is an easy recipe using few ingredients like ketchup and bell pepper and it's really nice and we love it. For who do not like foods too spicy but a little sweet and salty sauce so this is a perfect recipe.



KETCHUP PRAWNS

Ingredients:

300g prawns
4 cloves garlic, chopped
2cm ginger, sliced
1 green pepper, thinly sliced
1 tablespoon light soy sauce
4 tablespoon ketchup
1 teaspoon white vinegar
Salt, pepper and sugar to taste
Oil for frying

METHOD:

- Heat oil in a wok or saucepan and fry prawn until cooked. Set aside.
- Leave the little oil in a wok and fry garlic and ginger until aromatic.
- Add green pepper and cook for a few minutes.
- Add soy sauce, ketchup, vinegar, seasoning and little bit of water if required.
- Add in prawns and stir until the prawns are coated with the sauce.
- Remove from the heat and serve hot with rice.

Caramel Cupcakes

Bonsoir,

I made this caramel cupcakes few days ago and we're in love with it. I'd have to say that these cupcakes taste are almost perfect even without any frosting in it. Good thing is, they are not too sweet and the flavour is just right for me and mon mari.

I will definitely make this cupcakes again but with caramel frosting next time. It's not too difficult to make even though the caramel sauce have to be prepare in advance. For the leftovers caramel sauce, we can keep in the fridge for 2-3 weeks.



CARAMEL CUPCAKES

Ingredients:

For the caramel sauce:
200g sugar
90g salted butter
1/2 cup (120ml) heavy cream

Direction:
- Heat sugar in a heavy bottomed saucepan and cook for few minutes until the sugar start to turn brown.
- Gently swirl the pan to make sure all the sugar melts.
- Once the sugar has melted and bubbles form all over the surface, carefully add butter and stir until it is completely melt.
- Whisk and very slowly pour the heavy cream and allow the mixture to boil for a few second.
- Remove from heat and allow to cool completely before transfer into the jar.

For the cupcake:

2 1/2 cups flour
2 teaspoon baking powder
8 tablespoon butter
1 1/2 cups sugar
2 eggs
1 tablespoon vanila extract
1 1/4 whole milk
1/2 cup caramel sauce

METHOD:

- Preheat oven 180° and prepare cupcake pan with baking cup.
- Cream butter and sugar until light and fluffy.
- Add eggs one at a time and stir in with vanila.
- Slowly add half of the flour, baking powder and follow by half of the milk, and stir slowly with the rest of flour and milk.
- Add caramel and stir until fully incorporated.
- Pour the batter into prepared cupcake pan and bake for 15-20 minutes or until skewer testing comes out clean.
- Cool completely before frosting.

Noodles Soup / Mee Soto

Salut a tous,

Mee soto or spicy noodles soup is one of the most popular dish in Indonesia or Malaysia. The soup usually made from beef or chicken broth and served with rice noodles or yellow noodles. It comes with some garnishing like hard boiled egg, fried onion and bean sprouts. Since I live so far away from my hometown, soto is the things I miss the most.

Last months, I've made my own version of soto recipe but without meat. It was so great that we ate this soto two days in a row. I'm just thinking of making it again in the next few days. What I liked the most when eating soto is to mix them with hot chilli and soy sauce.

Here is my vegetarian version of mee soto recipe and the picture shown below taken in two days with different garnishing in it. I'm so happy that I managed to cooked soto at home.




NOODLES SOUP / MEE SOTO

Ingredients:

1/2 packet rice vermicelli
2 potato, cut cubed
2 carrot, cut cubed
2 cloves garlic, chopped
1 shallot, chopped
2 inch ginger, chopped
1 liter water or more as desired

All spices:
2 pcs star anise
2 pcs cardamom
1 small stick cinnamon
2 pcs cloves
1 teaspoon coriander seed
1 teaspoon fennel
1/2 teaspoon cumin
1/2 teaspoon white pepper

METHOD:

- Soak the rice noodles a warm water until soft about 20-30 minutes. Drain and set aside.
- Heat up some oil and fry garlic, shallot and ginger until fragrant.
- Add all spices and fry for a few second and add in potato and carrot.
- Add in water, bring to boiled and cook until potato and carrot soft for about 30-40 minutes
- Taste with salt and pepper.
- Prepare the noodles in a serving bowl and pour the hot soup over the noodles.
- Garnish with some hard boiled egg, fried onion, spring onion, cucumber or bean sprouts.
- For additional, optional and better taste, add some lemon juice, soy sauce and chopped chilli and mix together with the noodles soup.

Lemon Fish

Coucou,

Lemon chicken it's quite popular dish in Asia but today I will share about lemon fish recipe. Since mon mari and I didn't eat chicken, I used fish fillet instead of chicken. The lemon juice provides such a fresh flavour and the sauce isn't too lemony but the sauce was good and tasty.

Based on the Chinese style lemon chicken, my version now is a lemon fish.



LEMON FISH

Ingredients:

300g fish fillet, sliced small
2 tablespoon light soy sauce
1 egg
1 tablespoon corn flour
1/2 teaspoon baking powder
3-4 tablespoon sugar
1/2 cup water
1/2 tablespoon corn flour
2 tablespoon lemon juice
1 teaspoon lemon zest
A few sliced of lemon
Salt to taste
Oil for frying

METHOD:

- Marinate fish with soy sauce and refrigerate for 30 minutes.
- In a medium bowl, beat egg with corn flour, baking powder and salt and pepper.
- Coat the fish with the batter and deep frying until the fish is cooked.
- For the sauce, combine sugar, water, corn flour, lemon juice and lemon zest.
- Heat a little bit oil in the saucepan and stir in the lemon sauce mixture for a minute.
- Season with salt and add slices of lemon. Simmer for another minute and pour the sauce over fried fish fillet.

Oriental Squid

Salut,

Oriental squid is the first squid recipe I've posted on this blog. For the ingredients, it's actually easy to find and should be available from normal supermarkets or Asian grocery store. Home cooking is easy for me becauce I can use any ingredients at home and experiment with it. There is no rules, just be creative to the flavors and it will come up with the great taste. 

This squid recipe is quite simple to prepare, stir fry together with the sauce and voila, enjoy the unique and fragrant taste of oriental dish.



ORIENTAL SQUID

Ingredients:

300g cleaned squid
2 cloves garlic, sliced
1 shallot, sliced
1 green pepper, diced
2 carrot, sliced
Salt and pepper to taste

For the sauce:
1 tablespoon tom yam paste
1 tablespoon curry powder
1 tablespoon oyster sauce
1 tablespoon fish sauce
3 tablespoon water

METHOD:

- Combine all the sauce and set aside.
- In a wok or saucepan, heat little oil and saute garlic and shallot until fragrant.
- Add the sauce and cook for 1-2 minutes. Adding a little water if necessary.
- Add squid, green pepper and carrot and stir-fry until squid is tender about 2-3 minute.
- Season with salt and pepper. Remove from heat.

Italian Spaghetti With Prawns

A new month starts today and we are in November right now. Can't believe how quickly the days flew by. No matter how much time passes and no matter where we are or go, our life is beautiful! Enjoy every bit of life to the fullest.

I will start my post today with pasta recipe that I made few days ago. Mon mari enjoyed this pasta as much as I do. Even though spaghetti pasta is not his favorite, but this one is exceptional. Even there is the optional of dry chilli in this recipe, but the taste still not really spicy, so don't worry.



ITALIAN SPAGHETTI WITH PRAWNS

Ingredients:

1/2 packet dry spaghetti
2 cloves garlic, chopped
1-2 dried chilli, chopped
2 handfuls of cherry tomatoes, cut in half
200g prawn
2 tablespoon tomato puree
1 small bag of rocket salad
Salt and pepper to taste
Olive oil

METHOD:

- Boiled water and cook spaghetti according to packet directions.
- While the spaghetti is still boiled, heat a little olive oil to a frying pan and saute garlic and chilli until fragrant and golden brown.
- Add tomatoes and stir for a few minutes.
- Add prawns and cook for another minute.
- Add 1/2 cup of water and tomato puree and simmer for a couple of minutes.
- Add the spaghetti into the prawns tomato sauce and toss with rocket salad.
- Mix everything well and season with salt and pepper.
- Remove from heat and before serve sprinkle with some lemon juice or parmesan cheese and remaining rocket salad.

Fried Fish with Tamarind Sauce

Whenever I think about sour foods, lemon or tamarind is my choice. Most of Asian people liked spicy and sour tasted in their food. Fried fish with tamarind sauce is a combination of spicy and sour tamarind flavoured. This is an easy dish to prepare as long as you have tamarind pulp because this is a main ingredients.

Now, here's the simple recipe for fried fish with tamarind sauce.



FRIED FISH WITH TAMARIND SAUCE

Ingredients:

3 mackerels
1/2 teaspoon turmeric powder
1 onion, sliced
2 cloves garlic, sliced
2cm ginger, sliced
1-2 small chilli
1 cup tamarind juice (from 1 tablespoon tamarind pulp)
Salt to taste
Oil for frying

METHOD:

- Marinate mackerel with turmeric powder for 10 minutes.
- Fry fish until cooked or golden brown. Set aside.
- Heat little oil and saute garlic, ginger and chilli until fragrant.
- Add onion and tamarind juice and allow to boil and taste with salt and little sugar if needed.
- When the sauce is boiled, add fried fish and simmer for another minute.
- Remove from heat. This fish goes well with steamed rice.

Singapore Fried Rice Noodles

Coucou,

Every country has its own food specialty like in Thailand with Pad Thai Noodles, and same with Singapore with Singapore Fried Rice Noodles. This dish can be found easily in Singapore or even in Malaysia. But I am not sure if this Singapore noodles originally come from Singapore itself or somewhere like Hong Kong. Because there are saying that the curried rice vermicelli dish was born in Hong Kong.

Whatever it is, the Singapore rice noodles is simply delicious because of the curry powder flavor. One of our friend has requested this dish for his birthday next year. They enjoy the food and got the flavor as well the texture was just right. I am happy their liked it.



SINGAPORE FRIED RICE NOODLES

Ingredients:

1/2 package vermicelli rice noodles
4 cloves garlic, chopped
1 teaspoon chopped ginger
1 onion, thinly sliced
1 green pepper, thinly sliced
1 yellow pepper, thinly sliced
1 egg, cooked as omelette and sliced
Oil for frying

For the sauce:
4 tablespoon light soy sauce
1 tablespoon curry powder
1 tablespoon tomato ketchup
Salt and pepper to taste

METHOD:

- Soak the rice noodles in warm water for about half in hour or until it's thoroughly softened.
- Mix the sauce together and set aside.
- Heat work with little oil and fry garlic and ginger until fragrant.
- Add onion, green and yellow pepper and fry for 1-2 minutes.
- Add the sauce and continue to fry for a minute.
- Add the noodles and egg and let it cook for another few minutes. Stir frequently.
- Served hot with some cut chilli and soy sauce.

Cheesecake Swirled Brownies

For a couple of week now I have been making and testing few recipes of brownies. These brownies look like the perfect way to celebrate this week. Yesterday was our anniversary, so I made a cheesecake brownies which are our favourite combination and my cake turned out great!

Actually this cake need to freeze for at least 2 hour to set before cutting, but I cannot wait that long to try them that's why my cheesecake brownies looks little bit messy when slicing. Eventhough they are bit cracked in the middle but the cake probably taste amazing. For some cakes like cheesecakes, not only do the cakes look good, but they taste even better one day after it's made.

CHEESECAKE SWIRLED BROWNIES

Ingredients:

For the brownies:-
110g butter
220g sugar
2 eggs
1 teaspoon vanilla extract
80g cocoa powder
1/2 teaspoon baking powder
90g flour
50g chocolate chip or dark chocolate chunk


For the cheesecake:-
200g cream cheese
1/3 cup plain yogurt
1/2 sugar
1/2 teaspoon vanilla extract
1 egg

METHOD:

- Preheat oven 180° and prepare baking pan and line with baking paper, set aside.
- Melt butter and sugar in the saucepan over medium heat until bubbly, whisking occasionally.
- Allow to cool 10 minutes. Add egg and vanila and stir until smooth.
- Add cocoa powder, baking powder and flour and mix well to combined.
- Stir in chocolate chip and pour into prepared baking pan.
- In the separate bowl, combine and whisk together cream cheese, yogurt, sugar, vanilla and egg until smooth.
- Pour the cheese mixture over brownies batter and swirl gently with a knife.
- Bake for 30-40 minutes or until skewer comes out almost clean.
- Allow to cool and refrigerate for at least 2 hour or over night.
