Fried Fish with Tamarind Sauce

Bonsoir,

Whenever I think about sour foods, lemon or tamarind is my choice. Most of Asian people liked spicy and sour tasted in their food. Fried fish with tamarind sauce is a combination of spicy and sour tamarind flavoured. This is an easy dish to prepare as long as you have tamarind pulp because this is a main ingredients.

Now, here's the simple recipe for fried fish with tamarind sauce.



FRIED FISH WITH TAMARIND SAUCE

Ingredients:

3 mackerels
1/2 teaspoon turmeric powder
1 onion, sliced
2 cloves garlic, sliced
2cm ginger, sliced
1-2 small chilli
1 cup tamarind juice (from 1 tablespoon tamarind pulp)
Salt to taste
Oil for frying

METHOD:

- Marinate mackerel with turmeric powder for 10 minutes.
- Fry fish until cooked or golden brown. Set aside.
- Heat little oil and saute garlic, ginger and chilli until fragrant.
- Add onion and tamarind juice and allow to boil and taste with salt and little sugar if needed.
- When the sauce is boiled, add fried fish and simmer for another minute.
- Remove from heat. This fish goes well with steamed rice.

Singapore Fried Rice Noodles

Coucou,

Every country has its own food specialty like in Thailand with Pad Thai Noodles, and same with Singapore with Singapore Fried Rice Noodles. This dish can be found easily in Singapore or even in Malaysia. But I am not sure if this Singapore noodles originally come from Singapore itself or somewhere like Hong Kong. Because there are saying that the curried rice vermicelli dish was born in Hong Kong.

Whatever it is, the Singapore rice noodles is simply delicious because of the curry powder flavor. One of our friend has requested this dish for his birthday next year. They enjoy the food and got the flavor as well the texture was just right. I am happy their liked it.



SINGAPORE FRIED RICE NOODLES

Ingredients:

1/2 package vermicelli rice noodles
4 cloves garlic, chopped
1 teaspoon chopped ginger
1 onion, thinly sliced
1 green pepper, thinly sliced
1 yellow pepper, thinly sliced
1 egg, cooked as omelette and sliced
Oil for frying

For the sauce:
4 tablespoon light soy sauce
1 tablespoon curry powder
1 tablespoon tomato ketchup
Salt and pepper to taste

METHOD:

- Soak the rice noodles in warm water for about half in hour or until it's thoroughly softened.
- Mix the sauce together and set aside.
- Heat work with little oil and fry garlic and ginger until fragrant.
- Add onion, green and yellow pepper and fry for 1-2 minutes.
- Add the sauce and continue to fry for a minute.
- Add the noodles and egg and let it cook for another few minutes. Stir frequently.
- Served hot with some cut chilli and soy sauce.

Cheesecake Swirled Brownies

For a couple of week now I have been making and testing few recipes of brownies. These brownies look like the perfect way to celebrate this week. Yesterday was our anniversary, so I made a cheesecake brownies which are our favourite combination and my cake turned out great!

Actually this cake need to freeze for at least 2 hour to set before cutting, but I cannot wait that long to try them that's why my cheesecake brownies looks little bit messy when slicing. Eventhough they are bit cracked in the middle but the cake probably taste amazing. For some cakes like cheesecakes, not only do the cakes look good, but they taste even better one day after it's made.

CHEESECAKE SWIRLED BROWNIES

Ingredients:

For the brownies:-
110g butter
220g sugar
2 eggs
1 teaspoon vanilla extract
80g cocoa powder
1/2 teaspoon baking powder
90g flour
50g chocolate chip or dark chocolate chunk


For the cheesecake:-
200g cream cheese
1/3 cup plain yogurt
1/2 sugar
1/2 teaspoon vanilla extract
1 egg

METHOD:

- Preheat oven 180° and prepare baking pan and line with baking paper, set aside.
- Melt butter and sugar in the saucepan over medium heat until bubbly, whisking occasionally.
- Allow to cool 10 minutes. Add egg and vanila and stir until smooth.
- Add cocoa powder, baking powder and flour and mix well to combined.
- Stir in chocolate chip and pour into prepared baking pan.
- In the separate bowl, combine and whisk together cream cheese, yogurt, sugar, vanilla and egg until smooth.
- Pour the cheese mixture over brownies batter and swirl gently with a knife.
- Bake for 30-40 minutes or until skewer comes out almost clean.
- Allow to cool and refrigerate for at least 2 hour or over night.

Double Chocolate Brownies

Salut,

I must admit that I've been obsessed with brownies lately, I've tried few brownies recipes before but this one is my choice. This recipe is perfect! What can I say, these brownies are extremely chocolatey, moist and gooey inside, and of cause it's delicious. I am sure that I wouldn't buy any boxed brownies again.

This recipe as easy as boxed brownies, with not too many ingredients needed and most probably all things we have in our pantry. Mon mari and I love brownies, we don't really like dry brownies, we prefer a moist and gooey brownies.

Enough said, these rich brownies for any chocolate lover and now let's just get right to the recipe!



DOUBLE CHOCOLATE BROWNIES

Ingredients:

150g butter
250g sugar
100g cocoa powder
1 teaspoon vanilla extraxt
2 eggs
60g all purpose flour
100g white chocolate, cut chunk, (can use white chocolate chip)

METHOD:

- Preheat oven to 180° and prepare baking pan and line with parchment paper.
- In a medium saucepan, combine the butter, sugar and cocoa powder and melt the butter over low heat.
- Remove from heat and stir in vanilla.
- Add the eggs one at a time and whisk to combine until the batter looks thick and shiny.
- Add the flour and stir until well combined.
- Fold in the white chocolate chunk until almost mixed but do not overmix.
- Pour the mixture into the prepared tin and bake for 20-25 minutes.
- Test with a skewer, if it come out sticky and still clinging to the skewer, brownies should be done.
- Cool in the tin before slicing.

Prawns Chilli Fry

In my previous posted, I keep making a lot of recipes with prawns because prawns were a favourite in my house back in Malaisie and here too. This time, I cooked prawns chilli fry in Indian style with what ingredients I had at home.

I liked Indian food because everything comes down about the spices. It's quite hard to find a good Indian food around here like we had in Asia. Even if we find one with the good taste and there are spices, but it's not all chilli and not the spicy fiery kind but more like just plain curry or onion. I do understand that people here don't eat spicy food, that's why I prefer to cooked some Indian food at home.

Alors, these prawns chilli recipe is simple, quick and delicious, Let's cook indian style prawns chilli to have a little taste of Indian food.



PRAWNS CHILLI FRY

Ingredients:

300g prawns
1 onion, thinly sliced
1 tomato, chopped
2cm ginger, chopped
2 cloves garlic, chopped
1 teaspoon chilli powder
1/2 teaspoon turmeric powder
Salt and pepper to taste
Oil for frying

METHOD:

- Wash prawns and marinate the prawns with chilli and turmeric powder for 10-15 minutes.
- Heat little oil in wok and sauté onion, garlic and ginger until aromatic.
- Add tomato and cook on medium heat until the tomato are slightly soft.
- Add in the marinated prawn and fry on high heat till the prawn are lightly cooked.
- Season with salt and pepper and stir to combined well.
- Serve while it's hot with rice or breads.

Sweet and Sour Fish

Sweet and sour fish or chicken is a popular dish in Asia and easy to find almost in all Chinese restaurant. I cooked these dish sometimes when we feel we wanted to eat chinese food, so sweet and sour fish is the choice. They are easy to prepare and the taste is good.

Others types of fish will work in this recipe either whole or in fillets. I used whatever fish and ingredients I have on hand so any kind works really. Below is the recipe of simple sweet and sour fish.



SWEET AND SOUR FISH

300g fish fillets
1 tablespoon cornstarch
1 bell pepper, cut chunk
1 tomato, cut chunk
1 onion cut chunk
1 clove garlic, chopped
4 tablespoon tomato ketchup
4 tablespoon white vinegar
1 tablespoon light soy sauce
1/2 cup water
Salt, pepper and sugar to taste
Oil for frying

METHOD:

- Toss fish and coated with cornstarch, Fry fish until cook and set aside.
- Heat little oil in pan and fry garlic until aromatic.
- Add onion and bell pepper and fry for a minute.
- Add  ketchup, vinegar, soy sauce and water and bring to boil and simmer for 5-6 minutes.
- Once the sauce has slightly thickened, add tomatoes and taste with salt, pepper and sugar.
- Remove from heat and pour the sauce over fish.
- Serve hot with rice.

Enjoy the sweet and sour fish.

Penne Arrabbiata with Fresh Tomatoes

Cooking pasta is simple and obviously there are many type of pasta and there are all kinds of flavors we can add to pasta. One of the famous Italian recipe is penne arrabbiata, a spicy sauce for pasta but it's easy and quick to prepare.

For the arrabbiata sauce, I'm using only basic ingredients that I have at home. There are as many recipes for tomato pasta sauce and we can use most any kind of pasta with any kind of sauce. Let's have a look of my penne arrabbiata recipe below.



PENNE ARRABBIATA WITH FRESH TOMATOES

Ingredients: (2 serving)

250g penne
1 tomato, diced
3 cloves garlic, chopped
2 dry chillies, chopped
1 teaspoon dried parsley
Salt and pepper to taste
Olive oil

METHOD:

- Cook penne according to package direction.
- Heat up a little olive oil in pan and fry garlic and chillies until aromatic.
- Add tomato and a little water and simmer for a few minutes.
- Once the tomato becomes soft and the sauce has reduce, add in penne.
- Season with salt and pepper and parsley. Mix well until penne is coated in the sauce.
- Serve hot and spinkle with grated cheese.

Peanuts with Spicy Cornflakes

Nuts are popular in Asia either they are eaten plain as snacks or mashed into other food or cooked as a peanut sauce. Peanuts probably one of the most common snacks and it can be enjoyed at any time. J'aime beaucoup les cacahuètes. Peanuts are one of my all time favorite snacks.

There are many interesting and creative ways to enjoy peanuts and one of the recipe that I liked is peanuts with spicy conflakes. They're sweet, salty, a little spicy and crunchy. Let's have a simple snack and enjoy this spicy peanuts.




PEANUTS WITH SPICY CORNFLAKES

Ingredients:

250g peanuts
50g anchovies (optional)
2 cloves garlic
1 shallot
1 tablespoon chilli powder, mix with little water (can use fresh chilli paste)
2-3 tablespoons butter
2-3 tablespoons honey
3 cups cereal corn flakes
Salt and sugar to taste
Oil for frying

METHOD:

- Heat the oil and fry peanuts until golden brown. Drain and set aside.
- Fry anchovies until golden brown and set aside.
- Pound or chopped garlic and shallot.
- Heat butter in a frying pan and fry garlic and shallot until fragrant.
- Add the chilli paste and simmer for a minute.
- Add in honey, salt and sugar, keep stirring for a few seconds.
- Turn of the heat and add in peanuts, anchovies and cornflakes, mix well until they are well coated.
- Allow nuts to cool before serving.

Pan Fried Fish with Lemon Butter Sauce

Bonjour et bon dimanche à tous,

Fish, potatoes ans sauce are really perfect and simple food either for lunch or dinner. Fish can be cook in many ways and one of the recipe that I made few days ago is a pan fried fish with lemon butter sauce. Sometimes, the food that we prepared at home much better than restaurant food even the tastes of it.

So, let's start with some simple, yet tasty pan fried fish fillet.



PAN FRIED FISH WITH LEMON BUTTER SAUCE

Ingredients:

2 large or medium fish fillet (snapper or any fish fillet)
1/2 tablespoon cornflour
50g butter
2 cloves garlic, minced
1 lemon zest
2 tablespoon lemon juice
1 teaspoon dry parsley
Salt and pepper to taste
Oil for frying

METHOD:

- Season the fish with salt and pepper and dust with cornflour.
- Heat 1 tablespoon butter and 2 tablespoon oil in a frying pan and friy fish until half or over cooked. Set aside.
- Heat the butter and add the garlic until fragrant. Add the lemon zest and lemon juice.
- Taste with salt and pepper and add dry parsley.
- Serve the fish with baked potatoes and spoon the lemon butter sauce over the fish.

Fudgy White Chocolate Brownies

C'est Octobre maintenant, it's amazing how fast time flies by and sometimes we don't even relize it. We are less than 2 months before Christmas day and what will be new event will pop up nex year? There are many possible things that can happen in the future but we really hope the good things happen. "Life is a one way street, no matter how many detour we take, none of them leads back, so enjoy life every single day".

I've made white chocolate brownies this afternoon and they are really good. It's really easy and what can I say, they turned out nice and gooey. At the same time, they are buttery, chewy and I'm addicted to this cake now. Actually I'm not really a white chocolate lover but when it's come to this brownies, they become an irresistible. I like the fudgy brownies and these cake texture really meet my taste.




FUDGY WHITE CHOCOLATE BROWNIES

Ingredients:

1/2 cup butter
200g white chocolate bar or white chocolate chip
3/4 cup sugar
2 eggs
1/2 teaspoon salt
1 teaspoon vanila extract
1/2 teaspoon baking powder
1 cup all purpose flour

METHOD:

- Preheat oven 180° and prepare grease baking pan and line with parchment paper.
- Melt butter and white chocolate in a saucepan over a medium heat.
- Remove from heat and whisk in the sugar.
- Add the eggs, salt, vanila and whisk until combined.
- Stir in the flour and baking powder and mix until well combined.
- Pour the mixture into the prepared pan and bake for 25-30 minute.
- Remove from oven and cool completely.
