The Colour Of Wild Spring

Bonjour,

Spring is the season where most people likely to name it as their favorite seasons. Maybe it's because the wild spring flowers and blossom filled trees make everything looks beautiful and like a panting. Other than that the spring temperature become pleasant, not too cold like winter and not too hot like summer, it's just perfect, comfortable and the best times to travel.

Kuih Seri Muka

Hello,

Kuih seri muka is one of Malaysian traditional sweet snack made of steamed glutinous rice with coconut milk and layered with sweet pandan custard. I used to see my mom and my sister made these kuih when I was a teenager but never made it by myself. This morning I felt like I want to eat these kuih seri muka and I've made it for the first time.

Since we are only two at home, as usual every time I made an extra cakes, I would give it away to our neighbours. In this recipe, I used pandan extract since I don't have pandan leaves to make a natural pandan juice and a few drops of green food colouring.




KUIH SERI MUKA

Ingredients;

For the glutinous rice:-
1 cup glutinous rice, soak for 4 hour or overnight
1 cup light coconut milk
A pinch of salt

For the pandan custard layer:-
2 cups thick coconut milk
1/2 cup flour
1/4 cup corn flour
1/2 cup sugar
1 tablespoon pandan extract
A few drops of green food colouring

METHOD;

- Drain the glutinous rice and place in a baking dish and add coconut milk and salt.
- Prepare steamer and another baking pan and lightly grease with oil or cover with plastic, the plastic method just to be easy when take it out later. Set the pan aside.
- Steam the rice for 30 minutes.
- Remove the rice and transfer to another prepared baking pan and press down to compact and level it.
- Return the compacted rice into the steamer over low heat and add more water to the steamer if needed.
- Meanwhile, in a small bowl, mix and whisk all the pandan custard layer ingredients.
- Strain the custard batter over the rice and continue to steam over low heat for another 30 minutes.
- Let it to cool completely before slicing.

Matcha Brownies

Bonjour,

Last weekend, we went to visit a friend in Brest and stayed for two night in my mother-in-law house. It was a great weekend indeed. I've made matcha brownies and some cookies and took all these sweets for my mother-in-law and friends. I also made a black forest cake since she told me she likes black forest cake and have not eaten for quite long time. Just before we went back home in the afternoon, I baked for her another banana bread and she could eat it anytime and keep it for a few days or weeks. It's really gives me a great pleasure seeing her enjoy something I baked.




MATCHA BROWNIES

Ingredients;

120g salted butter, melted
200g white chocolate, chopped into small pieces
2 eggs
200g brown sugar
150g flour
1/4 teaspoon baking powder
2 tablespoons matcha powder

METHOD;

- Preheat oven 180° and prepare baking pan.
- Mix melted butter with eggs and sugar, mix well.
- Sift together flour, baking powder and matcha powder and fold in into the butter mixture.
- Add in chopped white chocolate and mix just until incorporated.
- Pour batter into prepared baking pan and bake for 20-25 minutes.

Baked Salmon With Creamy Garlic Butter Sauce

For the past few months, I've decided not to baked or cooked as much as I did before. I love cooking and baking, it will always be my passion but I'm not baking as often at the moment. We have decide to start eating healthy foods whenever we are at home or at least we tried to avoid or reduce the amounts of foods that we eat. We still enjoy our meal because it is important to eat a variety of food, there is no single food that provides us with all the nutrients we need, so eating well is the answer.

This baked salmon with creamy garlic butter sauce is one of our simple dinner meal that I made tonight. We ordered the similar meal in the restaurant last month during my mother-in-law birthday celebration and the meals that we had inspired me, so tonight I make this simple recipe and it turned out really good despite it is easy and tasty.




BAKED SALMON WITH CREAMY GARLIC BUTTER SAUCE

Ingredients;

2 salmon fillets
Salt, pepper, thyme and a tablespoon of olive oil to season
2 cloves garlic, chopped
2 tablespoons butter
1/2 cup cream
1/2 cup milk
1 teaspoon cornstarch, mix with 1 tablespoon of milk
Salt and pepper to taste

METHOD;

- Place the salmon fillets in a baking pan and season with salt, pepper, thyme and olive oil.
- Bake at 200° for 25 minutes or until the salmon cook through.
- Melt the butter in a small saucepan and add in garlic and fry until fragrant and brown.
- Add cream and milk and simmer for a couple of minutes over medium heat.
- Season with salt and pepper then pour the cornstarch into the sauce and stir until the sauce slightly thickened.
- Serve with steamed vegetables and pour the sauce over the baked salmon.

Roti John

Hello,

I remembered eating this sandwich almost every day during a festival event in some Asian country long time ago. We called it roti John and I have no idea who has invented this recipe and gave such a name. Some people got talent and be creative anyway. Whatever name people are called to this sandwich, one thing for sure, the taste were so good.

Every once in a while, I just crave roti John and some other snacks that I used to had in Asia. Making roti John at home is the only way, mix and match with what we like and the taste that much better. Normally roti John filled with mince beef omelet but I prefer the simple one, without meat.

I've made roti John for a dinner at friends place not long ago and kids are enjoying these sandwiches very much. I'm sure if there are more sandwiches, they would finish it all.




ROTI JOHN

Ingredients;

2 soft long buns/ sausage buns/ french baguette
2 eggs
1 small onion, chopped
Ketchup or chilli sauce
Mayonnaise
Salt and pepper
Green salad

METHOD;

- Mix and whisk the eggs, onion and salt and pepper, set aside.
- Cut the soft bun halfway open lengthwise but not all the way through, set aside.
- Using a large skillet or frying pan, over low heat, heat little oil and spread half of the egg mixture just the right size of the bun and cook for a few second.
- Place the bun over the half cooked omelet and continue to cook for another few seconds.
- Flip it over and allow the bun to heat up a little and remove from pan.
- Drizzle some mayonnaise, ketchup and salad over the omelet. Top and serve sandwiches.
