Apam Balik or Malaysian Peanut Pancake is the recipe that I am sharing today. I made once last month an mon mari love it so much. Apam Balik is a type of pancake, sprinkled with grounded peanuts, creamy sweetcorn, sugar and some butter.
So, here is the recipe to make Apam Balik...
APAM BALIK
Ingredients:-
2 cups all purpose flour
1/2 cups sugar
1 egg
1 tsp bicarbonate of soda
1 tsp baking powder
11/2 cups water
Toppings:-
1/2 cups ground peanuts
Some creamy sweetcorn
Sugar to taste
Some diced butter
METHOD:-
- In a large bowl, whisk egg and sugar until is dissolved.
- Add in water and mix well.
- Add flour, baking power and bicarbonate of soda and mix in until smooth and lump-free.
- Heat a nonstick pan on medium low heat.
- Pour in a small ladle of batter and swirl the pan so that the batter cover the entire surface. Once bubbles have formed, sprinkle the peanut, sweetcorn, sugar and drizzle a bit of the diced butter.
- Cook until the bottom of the pancake is golden brown and flip one side of the pancake over the other to fold in half and remove from pan.
- Cut in half and served warm.
