Steamed Fish

Hello,

Steamed fish is one of the classic Chinese dish, often served at the weddings and other festive occasions. Most of the Chinese seafood restaurant in Asia also served steamed whole fish with soy sauce with ginger. We used to order steamed fish when we go to Chinese restaurant with a large group of friend and family.


It's not easy to find Chinese seafood restaurant here in where we live unless we go to the big city and the price quite expensive. So cooking steamed fish at home is the solution, easier and cheaper. For this time, I used fillets instead of whole fish.



STEAMED FISH

Ingredients;

250g fish fillets
3cm fresh ginger, finely julienne
A handful of shredded scallion
1/4 cup light soy sauce
1 teaspoon sugar
2 tablespoons oil

METHOD;

- Mix soy sauce and sugar, set aside.
- Place fish fillets onto a plate and steam the fish for 10 minutes.
- Transfer the steamed fish in another plate and top with scallion.
- In a small pan, heat oil until hot, add ginger and soy sauce. Heat until bubbles up and boils and spoon hot oil over the fish.

Prawn Fried Rice

Hello,

Quick and easy, healthy and delicious prawn fried rice can be ready in less than 15 minutes. Obviously, fried rice has no limit to what we can add along with it, meat, seafood, vegetables or even a simple egg fried rice, it'll still turn out perfectly and delicious.



Fried rice, an easy dish that perfect for lunch and dinner but in Asia, fried rice is served for breakfast too.


PRAWN FRIED RICE

Ingredients;

2 cups/ bowl cooked rice
8-10 prawns
2 cloves garlic, chopped
1 carrot, chopped
2 spring onions, chopped
1 egg, beaten
Soy sauce, salt and pepper to taste

METHOD;

- Heat little oil in wok or frying pan, fry garlic until fragrant.
- Add carrots and cook for 1-2 minutes.
- Pour the beaten egg and scramble lightly, add prawns and stir-fry for a couple of minute.
- Stir in cooked rice and spring onion, season with soy sauce, salt and pepper. Toss together and cook for 2-3 minutes or until heated through.

Thai Prawn Curry

Sawadikha,

Thai curry either red or green curry paste can be cooked with chicken, shrimp, beef or fish. Thai prawn curry is one of my favourite dishes because I just love very hot spicy food, the more spicy the better. The curry dishes in restaurant wasn't spicy enough for me, so sometimes I ask for an extra chillies. That's how I enjoy my food, hot and spicy!

Thai green prawn curry

Thai red prawn curry

Actually, to prepare and cook prawn green curry and red curry, their cooking methods are very similar. Add more coconut milk or water depends on the thickness and individual preference.


THAI GREEN PRAWN CURRY

Ingredients;

200g prawns
1-2 tablespoons green curry paste
200ml coconut milk
Some vegetable (zucchini, eggplant, green beans, snow peas, green basil)
Fish sauce to taste

METHOD;

- In a medium sauce pan, heat 2-3 tablespoon coconut milk with green curry paste, saute until fragrant for 1-2 minutes.
- Add the rest of coconut milk, bring to boil and add prawns and vegetables.
- Taste the curry before season with fish sauce or sugar because some green curry paste may be sweeter and saltier than others. Cook until prawns are cooked through.


THAI RED PRAWN CURRY

Ingredients;

200g prawns
1-2 tablespoons red curry paste
200ml coconut milk
Some vegetable (red peppers, green or red chili, green beans)
Palm sugar/ brown sugar and fish sauce to taste

METHOD;

- In a medium sauce pan, heat 2-3 tablespoon coconut milk with red curry paste, saute until fragrant for 1-2 minutes.
- Add the rest of coconut milk, bring to boil and add prawns and vegetables.
- Season with fish sauce, palm sugar and cook until prawns are cooked through.

Homemade Pizza

Bonjourno,

I don't make pizza quite often but when I do, I used Roberta's pizza dough recipe, it's easy and always turned out great. I've been making this pizza dough recipe for years now and it's perfect! I personally like thin crust pizza, crispy and a little chewy.




HOMEMADE PIZZA
Adapted from Roberta's pizza dough recipe

Ingredients;

2 cups flour
1 teaspoon salt
200ml warm water
5g dry yeast
1 teaspoon olive oil

METHOD;

- In a large mixing bowl, combine flour and salt.
- In a small bowl, mix warm water, yeast and oil, let it sit for 15 minutes.
- Pour the yeast mixture little by little into flour mixture and knead until combine. If the dough looks dry, add more water or if too sticky, sprinkle with some flour. Let the dough rest for 15 minutes.
- Knead the dough again for 3 minutes and cut into 2 balls.
- Place the balls in heavily flour surface, cover and let rise for 3-4 hours.
- Take each ball, shape and stretch. Top with pizza topping desires.
- Bake in preheated oven at 250° for 12-15 minutes.

Ratatouille

Bonjour,

I crave ratatouille recently and since I've had some veggies in the fridge except eggplant, so I thought even without eggplant, it's not a big problem, right. We had ratatouille for dinner, this French ratatouille is super healthy and delicious.




RATATOUILLE

Ingredients;

2 onion, chopped
2 cloves garlic, chopped
1 eggplant, diced (I don't have eggplant, I used 1 carrot)
1 courgette, diced
1 red pepper, diced
1 tomatoes, chopped
1 small canned tomato sauces
A few sprigs of fresh thyme/ dried thyme
Olive oil, salt and pepper

METHOD;

- Heat little olive oil in a saucepan over a medium heat, add onion, garlic and thyme, fry for a few minutes or until softened.
- Since I used carrot, add chopped carrots first before other vegetables, cook for a few minutes.
- Add the courgettes, peppers and tomatoes, mix well.
- Simmer for another few minutes, add in canned tomatoes and season with salt and pepper.
- Cover the pan and simmer over low heat for 10-15 minutes or until vegetables are soft.
