Homemade Kaya

Salut,

First things first, I begin with the word of the day, KAYA. Kaya is a Malay word means rich but at the same time this word also means coconut jam. I've been thinking about kaya for the last few months but I couldn't find one that sell in the shop. How I want my bread and kaya for breakfast until I decided to try out kaya recipe from internet and make my homemade kaya at home.

It feels good now and it satisfied the craving I'd been feeling since many months. From now on, I can make this kaya at home anytime as the recipe was great yet calls for simple ingredients. I also like to bake my own white bread and I've been making quite a lot of breads and buns lately.




HOMEMADE KAYA

Ingredients;

3 large eggs
250g sugar
350ml coconut milk

METHOD;

- Mix 150g sugar with coconut milk, whisk until sugar dissolved.
- Add in eggs and stir to combined. Set aside.
- In a small saucepan, heat the sugar until it melts and turn brown.
- Pour the caramel sugar into egg mixture and continue to stirring until the caramel sugar dissolved.
- Meanwhile, prepare double boiler on the stove over low heat.
- Place the mixture bowl in the top of double boiler.
- Stir the mixture occasionally, every 2 or 3 minute to avoid the burning.
- It took me about an hours to cook until I achieve the desired thickness.
- Cool the kaya completely before transfer in a jar.
- Keep kaya in the fridge and it can last for a couple of week.

Enjoy the kaya with bread!

Fried Fish with Three Flavoured Sauce

Bonjour,

Asian food, just thinking and picturing the savory and aromatic taste of some Asian food makes me drool. How I miss all the food that my mom used to cook at home. From fish, local vegetables and even a simple fried rice, everything just make my mouth water.

Ikan masak tiga rasa or fried fish cooked with three flavoured sauce has a three flavour, sweet, sour and spicy. Only one dish meal enough for dinner with fish and vegetables comes together, simple yet very satisfying.



FRIED FISH WITH THREE FLAVOURED SAUCE

Ingredients;

2 mackerel or any kind of fish
2 cloves garlic, chopped
1 shallot, chopped
1cm ginger, thinly sliced
1 lemongrass, thinly sliced
1 green or red chilli, sliced
1 onion, sliced
1 carrot, sliced
1 tomato, sliced
2-3 tablespoons ketchup
2-3 tablespoons sweet chilli sauce
1-2 tablespoon oyster sauce
1-2 tablespoons fish sauce
1 tablespoon corn flour, dissolved with 1/4 cup water

METHOD;

- Clean the fish, season with salt and fry the fish until golden brown and cooked through. Set aside.
- Heat up little oil in a saucepan  and fry garlic, shallot, ginger and lemongrass until fragrant.
- Add chilli, onion, carrot and add a little water if necessary. Cook and simmer for a few minutes.
- Add in tomatoes and all the sauces and let the sauce boil for a minute.
- Add cornflour mixture to thicken and season with salt.
- Simmer for another minute and pour the sauce over the fried fish.

Enjoy the fish with rice!

Steamed Fruit Cake

Hello,

Steamed fruit cake or kek buah kukus is one of the cake that many Malaysian food bloggers have tried and everyone give a positive feedback and said this cake was really good. So, I've made this cake not long ago and I must admit it is a lovely cake indeed. Thanks to chef Zubaidah for the great recipe.

There is some different recipe of steamed fruit cake that I knew but the basic ingredients are the same. The original recipe called for steaming but instead of steaming, I used the water bath method. For those who want to steam this cake, it will need to be steam for about 2-4 hours so the cake would come out with a moist texture and it can be kept for a month or more.



KEK BUAH KUKUS

Ingredients;

350g sugar
60ml hot water
250g butter
400g dried mix fruits
100g chopped walnuts
3 eggs
350g flour
2 teaspoon bicarbonate of soda
1 teaspoon cinnamon powder
1 teaspoon vanilla extract

METHOD;

- In a medium saucepan, melt the sugar until it turn brown and slowly pour hot water and stir until the sugar dissolved.
- Add butter and stir constantly until the butter has melted.
- Add in mix fruits and walnuts and stir to mix together. Let the mixture simmer for a few minutes. Set aside to cool a bit.
- Meanwhile, prepare water bath and preheat oven 150°.
- Sift together flour, bicarbonate of soda and cinnamon.
- Add the flour into the fruits mixture and mix to combine.
- Lightly whisk the egg with vanilla extract and pour the egg into cake batter and stir until well blended.
- Pour batter into prepare baking pan. Cover the cake with aluminium foil to prevent the top of the cake from burning.
- Place the cake pan into a large prepared water bath and bake for 1 1/2 to 2 hours.
- Let the cake cool completely before cutting.

Spicy Honey Cornflakes With Peanuts

Bonjour,

One of my old time favourite snacks is spicy honey cornflakes, with or without peanuts they are still tasted good. These snacks is so addictive or maybe it's just me but I am pretty sure for some people who loves spicy food would say the same thing.

I've made these snacks a few times in a month. I gave some of spicy honey cornflakes to our friends after our Japanese dinner last time. It seems they like these snacks too. It was a bit spicy for them but like they said, "it's was good, even a little bit spicy, but it's good".





SPICY HONEY CORNFLAKES WITH PEANUTS
Ingredients;

3 cups cornflakes
1/2 cup fried or roasted peanuts, optional
2 shallot
1 clove garlic
5-8 dry chilli, soaked in hot water
2-3 tablespoons butter
2-3 tablespoons honey
Salt and sugar to taste

METHOD;

- Pound or blend shallot, garlic and dry chillies into a coarse paste.
- Heat up butter in a work or large pan and saute shallot chilli paste until fragrant.
- Add honey, salt and sugar, stir well for a few second on the low heat.
- Turn of the heat, add cornflakes and peanuts, mix well until all the cornflakes are well coated.

Cornflakes Chocolate Nuts Cookies

Salut,

Merry Christmas and  we are only a few hours away from the gift giving day of the year. I'm pretty sure some people are busy in the kitchen cooking and preparing for the Christmas Eve dinner tonight. I've made some cookies few days ago and been giving homemade cookies and cake as a gift for our friends and neigbour. I love giving something as a gift especially cookies and cakes because they are easy to make ahead.

These cornflakes chocolate nuts cookies is one of the recipe that I got from Azlita masam manis blog but I've change the name based on the ingredients in these cookies. I've made these cookies many times and one of the easy cookies to make and it turns out great and delicious every time.



CORNFLAKES CHOCOLATE NUTS COOKIES

Ingredients;

150g butter, soften
150g flour
75g sugar
60g cornflakes
50g chocolate chip/ dark chocolate, chopped
25g almond/ walnuts, chopped
1 teaspoon vanilla extract
Red cherry or fruits for garnish

METHOD;

- Preheat oven 170° and prepare baking pan.
- In a bowl and using a wooden spoon, combine butter and sugar and just mix until the butter and sugar soft.
- Add flour and mix well.
- Add cornflakes, chocolate chip, nuts and vanilla. Mix until everything combine together.
- Drop a teaspoonfuls dough or make a small ball onto a prepare baking pan and garnish with red cherry or dry fruits.
- Bake for 15-20 minutes or until the cookies are lightly browned.
