Sweet Chilli Prawns

Salut,

Sweet chilli prawns, another simple prawn recipes, quick and elegant, yet it comes with loads of flavour. I didn't even add salt or pepper because the sauce itself is decent and it was delicious! One thing for sure, they are our favorite too. This refreshing meal can be ready in less than 10 minutes. So, why wait, let's cook!



SWEET CHILLI PRAWNS

Ingredients:

300g prawns
4 cloves garlic, chopped
2 small chillies, optional
2 stalks spring onions
4 tablespoon Thai sweet chilli sauce
1 teaspoon soy sauce

METHOD:

- Heat the little oil in a frying pan and fry garlic and chillies until aromatic.
- Add the prawns, cook and stirring for 2-3 minutes or until prawns are just cooked through.
- Add in the Thai sweet chilli sauce, soy sauce and stir to combined. Add little water if desired.
- Once the sauce thickens, add in spring onions, stir well and remove from heat.

Fried Stuffed Tofu

Salut,

Tofu or bean curd is a versatile food that we can eat raw, baked, sauteed or fried. Stuffed tofu or tauhu sumbat in malay is one of my favorite food. Cooking tofu is easy and it's an ideal food for vegetarian.



FRIED STUFF TOFU

Ingredients:

1 packed firm tofu, cut into small squares
1 small bowl beansprouts
1 carrot, peel and grated
1 shallot, sliced
1 egg, lightly beaten
Salt and pepper to taste
Oil

METHOD:

- Heat oil in a pan, place the square tofu and fry both sides until slightly brown.
- Scoop some fried tofu out of the center to make a dent of each square and reserve the scooped tofu and keep the fried tofu aside.
- Heat up little oil in a saucepan and fry shallot until fragrant.
- Add beansprouts and carrot and fry for a minute. Add the scooped tofu and cook for 1-2 more minutes.
- Season with salt and pepper. Turn off the heat.
- Put about 1 teaspoon of fried vegetables in each fried tofu and fill the hole as stuffing. Refeat till all finish.
- Dip tofu into an egg, coat evenly with egg and carefully lower the coated tofu into the hot oil and fry both side until golden brown.
- Best to eat while it's still hot with Thai sweet chilli sauce.

Steamed Fish with Soy Sauce

Bonjour,

One of the easiest way to do with fish is steamed. With only few fresh ingredients in hand, we can make a simple and tasty steamed fish. In most Chinese restaurant, this dish often serve with whole fish. The last time I made these steamed fish using fish fillet and they turned out so good.



STEAMED FISH WITH SOY SAUCE

Ingredients:

1 big size fish fillet
1 bunch coriander, roughly chopped
4 spring onions, sliced
4cm fresh ginger, shredded
2 tablespoon dark soy sauce
2 tablespoon light soy sauce
1/2 teaspoon sesame oil
Sugar to taste
Oil

METHOD:

- Clean and place the fish on a heatproof plate and spread half of the ginger and spring onion on top of the fish.
- Steam and cover a steamer wok and steam the fish for few minute or until fish is cook.
- Once the fish has cooked, take it out of steamer and transfer fish to a serving plate. Scatter the rest of ginger and sping onions over the steamed fish.
- In a small saucepan, heat up some oil, add soy sauce, sesame oil and add a little bit water and sugar if desire.
- Pour all over the fish. Garnish with coriander.

Malaysian Honeycomb Cake

Bonjour,

Malaysian style honeycomb cake also called kek sarang semut in Malaysia. I remember my sister used to make this cake when I was a teenager and this cake is one of the easiest cakes to make. I have not eaten these cake for such a long time now. Few days ago, I made this cake and it remind me of my childhood time. It's a spongy cake, dark colour, balanced taste and simply delicious.



MALAYSIAN HONEYCOMB CAKE

Ingredients:

1 1/4 cups sugar
1 cup hot water
125g butter
4 eggs
1/4 cup condensed milk
1 cup flour
2 teaspoon bicarbonate of soda

METHOD:

- Melt sugar in the heavy saucepan over low heat. Once sugar has melted and turned brown, slowly add hot water. Let it cool.
- In another saucepan, melt butter, set aside.
- Sift flour and bicarbonate of soda.
- In the big bowl, lightly beaten eggs using a fork or hand whisk.
- Add in condensed milk and whisk until just combined.
- Add melted butter and flour and mix until well combined.
- Lastly, add in sugar caramel and mix well.
- Pour the batter in the prepared baking pan and let the batter sit for 1-2 hour for the bubbles to begin developing..
- Bake in a preheat oven 170° for 50 mins to 1 hour or until skewer comes out clean.
- Let it cool completely before cutting.

Teriyaki Fish with Soba Noodles

Bonjour,

An easy and healthy recipe for fish teriyaki doesn't need many ingredients, just a few basic ingredient at home can make a tasty and delicious dish. Making homemade teriyaki sauce is easy, just mix the ingredients together, boil and voila, this dish can be serve with rice or noodles or just eat with salad. It's delicious.




TERIYAKI FISH WITH SOBA NOODLES

Ingredients:

300g fish fillet or salmon
1/2 or 1 packet soba noodles
1 bunch green vegetables/ choy sum, cut
1 carrot, sliced
1 cloves garlic, chopped
1 tablespoon light soya sauce
Salt and pepper to taste
Oil for frying

For the teriyaki sauce:
2 cloves garlic, chopped
2cm ginger, chopped
2 tablespoon mirin or rice vinegar
5 tablespoon light soy sauce/kikkoman
2 tablespoon brown sugar
1 tablespoon water

METHOD:

- Marinate fish fillet with soya sauce, salt and pepper for at least 1 hour.
- Mix the teriyaki sauce together, set aside.
- Boil soba noodles according to package direction.
- Heat a little oil in wok and fry garlic until fragrant.
- Add carrot and choy sum and stir fry for a few minutes.
- Add soba noodles, season with salt and pepper and stir to mix well and heat through. Serve on the plate.
- Heat oil in a frying pan and pan-fry fish until cook or crisp. Set aside.
- In the same frying pan, bring to boil the teriyaki sauce and simmer until the sauce is slightly thick.
- Add the fish fillet and coat in the sauce. Remove from heat.
- Serve and laid the fish teriyaki on top of the soba noodles and garnish with coriander.
