Fried Noodles Mamak Style

Salut a tous,

In my previous blog post, I have written about 'Mamak', and today I would post another recipe called Mee Mamak which means Fried Noodles Mamak Style. This dish commanly found in hawkers centre and almost everywhere in Singapore and Malaysia.

When I was with my family, this dish rotates almost every week at our home because mee mamak is one of my brother favorite noodles. Nothing beats the taste of noodles cooked with a sweet and spicy, salty and sourish too. Here, except that yellow noodles is a little hard to find although not impossible. I used spaghetti noodles as a substitute for the yellow noodles. This mee mamak usually comes with meat or seafood but I made this noodles vegetarian for these time.

So, here is the recipe for Mee Mamak.


FRIED NOODLES MAMAK STYLE

Ingredients:-

Half packed spaghetti
2 potatoes, peeled and cut cubes
1 onion, sliced
1 tomato, cut cubes
5-6 green spring onions
1 egg
2 cloves garlic, chopped
2 small chilli, chopped
3 tablespoon ketchup
3 tablespoon chilli sauce
2 tablespoon dark soy sauce
Salt and pepper to taste
Oil for frying

METHOD:-

- Cooked the spaghetti noodless follow the package instruction. Drained and keep aside.
- Fry the potatoes until tender but not to over cook. Keep aside.
- Heat the little oil in a wok and saute garlic and chilli until fragrant.
- Add onion and fry for a minute.
- Crack the egg and scramble them up a little than add spaghetti and potatoes.
- Add the ketchup, chilli sauce, dark soy sauce and taste with salt and pepper.
- Add the tomato and spring onion and cook for another minute.
- Served with lime or lemon wedges.

Raisin Cake

Bonsoir a tous...

Today is 1st day of Ramadhan for all Muslims all over the world. Also, for the World Cup season and fever is everywhere at the moment. We was a little busy few weeks ago with my class, art exhibition here and there and I feel the day went so much quicker than I anticipated.

Baking is back!..I made this raisin cake 2 days ago. Eggless and butterless cake is an easy to make. Sometime, there's nothing much different like the taste of a cake you made with egg and butter. This cake is not really moist but the taste did not disappoint at all.

Alors, let see the recipe below.


RAISIN CAKE

Ingredient:-

11/2 cup all purpose flour
1/2 cup sugar
1/3 cup vegetables oil
1 cup cream liquid or plain yogurt
1 cup dry raisin
1 teaspoon vanila extract
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
1 tablesppon of flour for coating the raisin

METHOD:-

- Prepare and grease the baking tin. Preheat oven 180°
- In a bowl, mix cream liquid and sugar and beat for 2 minutes.
- Add baking powder and bicarbonate and mix well. Keep aside for 2-3 minutes.
- In another bowl, mix a tablespoon of flour with raisin and coated well.
- After that, add in vanila and oil into cream mixture. Do not over mix.
- Add flour and raisin and mix it well.
- Pour the batter in the grease baking tin and bake for 30-40 minute or until skewer comes out clean.

Black Pepper Prawn and Mamak Prawn Curry

Bonsoir,

I want to share another prawns recipe today called Black Pepper Prawn and Mamak Prawn Curry. 'Mamak' refers to Indian-Muslim in Malaysia. Almost every food and recipe by the Indian-Muslim community also call 'Mamak'.

Prawns are always my favorite seafood and there will be more prawns recipe in future. We ate prawn every once a week or sometimes every two week. For me, by trying a different prawns recipes will bring with it a slightly different taste and everything will tasted good and delicious. Let's just see the two prawns recipe below.

BLACK PEPPER PRAWN


Ingredient:-

300gm medium prawn
1 inch ginger, sliced
1 onion, sliced
1 carrot, sliced
5 spring onion, sliced
2 cloves garlic, chopped
2 tablespoon dark soy sauce
1 tablespoon fish sauce
1 teaspoon black pepper

METHOD:-

- Heat the little oil in frying pan and sautee garlic and ginger until fragrant.
- Add prawn and stir fry for 1-2 minutes.
- Add in onion and carrot and toss around for another minute.
- Add dark soya sauce, fish sauce, black pepper, salt and add in a little water.
- Bring to boiled then reduced the heat and simmer for a few minutes to thicken slightly.
- Add in spring onion and put off the fire.


MAMAK PRAWN CURRY


Ingredients:-

300gm medium prawn
1 onion, chopped
2 cloves garlic, chopped
1 inch ginger, chopped
2 tablespoon curry powder, make a paste with little water
2 tablespoon chilli sauce
2 tablespoon tomato sauce
1/2 cup water
Salt, pepper and sugar to taste

METHOD:-

- Marinate prawn with salt and fry the prawn until golden brown. Set aside.
- Heat a little cooking oil and sautee garlic and ginger until fragrant.
- Add curry paste, cook and stirring for a few minute.
- Add onion, chilli sauce, tomato sauce and water and mix them thoroughly.
- Once the sauce slighty thicken, add in prawn and taste with salt, pepper and sugar.

Yummy prawns and serve hot with rice. Bon appetit!!

Tiramisu Cake

Yesterday I made Tiramisu cake after chatting with my niece about Tiramisu cake. She made this cake a few weeks ago. Actually, I've made it a couple of times and it's one of my favorite cake. Tiramisu are delicious and easy to prepare. Almost everyone likes these cake.

This recipe was so easy to follow, eggless, no alcohol, fast and tasty basic Tiramisu. At the same time it turned out perfect!



TIRAMISU CAKE

Ingredients:-

250gm mascarpone cheese
20cl cream liquid/ heavy cream
1/2 cup caster sugar
1 cup prepared coffee
1 packet ladyfinger biscuit
Cocoa powder
Unsweetened dark chocolate shaving, for topping

METHOD:-

- Beat mascarpone cheese, heavy cream and sugar until combined.
- Dip ladyfingers into the coffee for a second and line the ladyfinger in the dish.
- Layer with mascarpone mixture and sift a layer with cocoa powder.
- Apply second layer of ladyfingers and remaining mascarpone cheese.
- Sift cocoa powder and top up with chocolate shaving.
- Cover in plastic wrap and chill.

Curry Puff

I made this Curry Puff a few weeks ago but I make a different version from my previous version of curry puff. I love curry puff ever since I was a kid and mon mari loves curry puff too. I started making my own curry puff since I moved here.

I always make curry puff in bulk and then I can keep in the freezer. I can fry them and they are ready to be served in no time. Sometimes, these curry puff are deliciously addictive and I readily make them for our friends to enjoy and they like this curry puff and praise the pastry was very good. I'm glad they enjoyed it.

So, here's a recipe for curry puff...

CURRY PUFF

Ingredients:-

Pastry;
400gm all purpose flour
1/2 cup vegetable oil
2 tablespoon butter
1/2 cup cold water + pinch of salt

Filling:
4 potato, peeled and diced
2 tablespoon curry powder, make a paste
2 tablespoon dry shrimp, pound finely
2 clove garlic, minced
1 cup water
Salt and sugar to taste

METHOD:-

Pastry:
- Melt and heat butter with oil.
- Pour hot oil over flour in the mixing bowl, then mix thoroughly with a wooden spoon.
- Add in water little by little and knead to form soft dough.
- Cover dough with plastic and rest in for at least 20 minute.

Filling:
- Heat a little oil in work and stir fry garlic and dry shrimp until fragrant.
- Add in curry powder and cook for a minute.
- Add in potato and water. Bring to boil for about 5 minute.
- Add salt and sugar to taste. Turn the heat down and cook with lid on until potato is soften and the liquid is reduced. Cool completely.

Assemble:
- Divide dough into small balls then roll out into an oval shape.
- Place about spoon full potato filling onto the oval shape flat pastry and fold it into half and pinch the edges to seal the pastry.
- Heat sufficient oil in wok/pan for deep frying and fry curry puff until golden brown.
