Steamed Red Bean Buns

Hello,

Last month, we spent almost four weeks traveling in Asia specially in Malaysia and Thailand. I'm slowly catching up on my blog posts from the last couple of months. It's just a bit too much of Asian food when we were in Asia and now it's time to track back my food and calories intake.


This afternoon, I made steamed red bean buns, but for the red bean paste I have made it one day earlier. When we were in Malaysia, we used to buy the baked version of red bean buns that we can find everywhere in the small or big shops.



STEAMED RED BEAN BUNS

Ingredients;

For the paste

200g red beans
1/2 cup brown or white sugar
1 tablespoon vegetable oil

Dough

250g flour
1 teaspoon baking powder
1 tablespoon butter or vegetable oil
1/2 cup warm water
1 packet dry yeast
1 tablespoon sugar

METHOD;

For the red bean paste:-
- Soak red beans in water overnight.
- In a medium saucepan, add red beans and water about 3 cups and bring to boil over medium heat for at least 30 minutes.
- Once the red beans are almost soft, transfer the red beans with the water to a blender or food processor and blend red beans until it becomes a paste.
- Transfer back the paste into saucepan and add sugar, simmer over low heat until the paste reach the desire thickness.
- Add in 1 tablespoon of oil and stir a while before turn it off. Allow the paste to cool, keep in the fridge.

For the dough:-

- Dissolve sugar and dry yeast with 1/2 cup of warm water. Allow to foam for 10 minutes.
- In a bowl of standing mixer, mix flour, baking powder, butter or oil and a pinch of salt.
- Add in the yeast mixture and knead the dough for 5-7 minutes or until smooth.
- Remove the dough and divided into small balls, about 8-9 balls.
- Flatten the ball and place about 1 tablespoon of red bean paste in the center, Gather up the edge to seal and shape into round ball.
- Place the ball on the small square baking paper.
- Arrange the bun in a tray and let the buns rise for another 15-30 minutes, in a warm area.
- Prepare the steamer, I used the bamboo steamer and place the buns in a steamer and steam for 7-10 minutes.
- Once it's done, transfer the bamboo steamer away from the water, remove the cover and take the buns out. Continue to steam the rest of the buns.
- Buns also can be frozen and steam for 5 minute before serve.

Bean Sprouts Simple Recipe

Bonjour,

Bean sprouts is another popular vegetables that we can find everywhere in Asia. Bean sprouts usually used as an ingredient in many Asian dishes like fried noodles, spring rolls or noodles soup. They are also great as salad or just a simple and quick stir fry bean sprouts with garlic and salted fish.


I've bought a large packet of bean sprout last few days and made a salad and stir fry with it. There are no specific ingredients or recipe for these salad and stir fry, I just used up what I had in the kitchen.



BEAN SPROUTS SALAD

Ingredients;

Bean sprouts
Carrot
Cherry tomatoes
Prawns, boiled
Lemon juice
White vinegar
A bit of mayonnaise
Salt and pepper

METHOD;

- Mix all the ingredients and season with salt and pepper.




STIR FRIED BEAN SPROUTS WITH SALTED FISH

Ingredients;

Bean sprouts
Fried salted fish
1 green chili
2 cloves garlic
Oyster sauce
Soy sauce
Salt and pepper

METHOD;

- Heat up little oil in a sauce pan and fry garlic until fragrant.
- Add bean sprouts and green chili, season with a bit of oyster and soy sauce and salt and pepper.
- Lastly add the fried salted fish and give it a quick stir fry.

Banana muffins

Bonjour,

Ça fait longtemps que je n'avais pas fait de muffins a la banane. This afternoon I made banana muffins since I have ripe bananas in the kitchen and I will bring these muffins to my MIL tomorrow. I'm pretty sure she would like it.


So simple yet so delicious, without any fancy ingredients or stuff to make it and voila, muffins a la banane sont prêt dans 30 minutes. I add chopped dark chocolate on top but even without chocolate, these banana muffins tastes so good and moist. Recipe from Genius Kitchen.com..



BANANA MUFFINS

Ingredients;

3 bananas, mashed
3/4 cup sugar
1 egg, slightly beaten
1/3 melted butter
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups flour

METHOD;

- Preheat oven 375° and prepare muffin cups.
- Mash bananas in a medium bowl.
- Add sugar and beaten egg.
- Add in melted butter and dry ingredients, gently stir and pour in the muffin cups.
- Bake for 20 minutes.

Stir Fried Kailan With Salted Fish

Kai lan or Chinese broccoli is one of the common vegetables that we can found easily in some Asian countries. These kind of vegetables are always available in Chinese restaurant and one of the popular dish is stir fried kailan with salted fish.


I can't remember when was the last time I ate kailan with salted fish. When I saw these kailan in grocery store yesterday, I grabbed it right away because I have been thinking about this for a while. Let's cook a quick stir fry kailan with salted fish.



STIR FRIED KAILAN WITH SALTED FISH

Ingredients;

200g kailan, for 2 serving
2 tablespoons fried salted fish, chopped
3 cloves garlic, thinly sliced
1-2 small chili, chopped, optional
1 tablespoon oyster sauce
1-2 tablespoons light soy sauce
1/2 teaspoon cornflour, mix with 1 tablespoon of water
Salt and pepper to taste
A few drop of sesame oil

METHOD;

- Trim, wash and rinse the kailan.
- Heat up little oil in a saucepan or wok and fry garlic and chili until fragrant.
- Add kailan, oyster sauce and soya sauce.
- Stir fry for a couple of minute, season with salt and pepper.
- Turn the heat up and give a quick stir fry and pour cornflour paste to thicken the sauce.
- Add fried salted fish and a few drop of sesame oil before turn off the heat.

Fruit Cocktail Trifle

Hello,

Another day sometimes brings another dessert and for sure it was an easy dessert that I made recently, fruit cocktail trifle. These trifle was one of the dessert that I brought for our snacks party in CLPS last week. It's not a typical Asian dessert but more to an English style trifle.


As simple as it is, these trifle as well look as good as it tastes!



FRUIT COCKTAIL TRIFLE

Ingredients;

1 small packet ladyfingers biscuit
1 can fruit cocktail, strain the fruits and keep the juice aside
1/4 cup custard powder
2 cup milk
2 tablespoons sugar
Whipped cream

METHOD;

- Combine custard powder with milk and sugar in a saucepan and stir until smooth.
- Heat up the custard mixture over medium heat, stirring constantly until it comes to the boil and thickens. Simmer and stirring for a couple of minutes. Set aside to cool down a bit.
- Arrange ladyfingers biscuit in a glass or bowl and pour a few tablespoons of fruit juice all over the biscuit.
- Pour custard over the biscuit and spread the fruit cocktail on top.
- Keep the trifle in the fridge for a few hours.
- Before serving, spread or pipe whipped cream over the top of trifle.
